Carrot rava kheer

CARROT KHEER / CARROT SEMOLINA PORRIDGE /CARROT SOOJI KHEER

Carrot Kheer – Another interesting kheer variation where roasted carrots simmered in milk and mixed with sugar and nuts until it reaches a creamy consistency. It can be made ahead of time and refrigerated. Excellent way to treat your guests on parties and get togethers!

INGREDIENTS

  • Rava [ Semolina, sooji ] – 1 tbsp
  • Carrot – 1 cup [ finely grated]
  • Ghee  – 2 to 3 tbsp
  • Milk – 500 ml cup
  • Sugar – 3 to 4 tbsp ..depends on the sweetness of 🥕 carrot also
  • Cardamom powder – 1/4 tsp
  • Saffron – few strands
  • Fried Dry fruits for garnish

METHOD

Heat ghee in a  pan, add rava sauté for 2 min.

Add carrot saute for 4 to 5 mins.

Add milk, let it boil & wait milk becomes slightly thick.

Add sugar and cook for another 3 min.

Add cardamom powder + saffron and mix well. Off the flame .

Garnish with dry fruits .

Serve hot or cold.
