CHEESE Corn capsicum sandwich recipe

CORN CAPSICUM SANDWICH

INGREDIENT

  • Boiled Corn – 1 cup
  • Capsicum finely chopped – 1/2 cup
  • Olive oil – 1 tsp + butter – 1 tbsp
  • Oregano or mixed herb – 1 tsp
  • Red chilli flakes – 1 tsp
  • Pepper pwdr – 1/4 or 1/2 tsp
  • Garlic finely minced – 1 tsp
  • All purpose flour / maida – 1 tbsp
  • Milk – 1 cup
  • Grated cheese – 2 or 3 cubes
  • Brown or white bread slices as required
  • Salt to taste

METHOD

Heat oil + butter in a pan on medium flame .

Add garlic and stir fry for few seconds till aromatic , colour should not change.

Add maida and fry for 1 min on low flame without burning it.

Add milk and keep stirring so that lumps are not formed.Bring to a boil .

Add salt + pepper + mixed herbs + chilli flakes .

Add corn + capsicum and mix well.

Mix in the grated cheese.

Cook  for 2 mins till the mixture becomes thick .

Off the fame and allow it to cool.

Apply butter on one side of all the bread slices.

Place in the mixture and spread it. Cover it with another bread.

Toast the sandwich on both the sides by applying butter till golden brown.

Cut into triangles and serve.
