CHICKEN ROULADE

A chicken roulade is a dish where you take a chicken breast, pound it flat, and stuff it with vegetables, cheese, and even other meats by rolling it tightly into a cylinder with the stuffing inside. You then top the roulades with cheese or other sauces.

These roulades are mostly chicken breasts that have been pounded very thin, and then rolled up with strips of cooked bacon, sautéed shallots, and grated Parmesan, then browned and baked. They are served sliced over a creamy white sauce made from the bacon and chicken drippings.

INGREDIENTS

  • Chicken breast – 1
  • Salt and pepper pwdr as needed
  • Grated cheese /cheese slice or any cheese [ use slices ]
  • Mixed herbs
  • Chilli flakes
  • Olive oil /butter – 2 tbsp

METHOD

Make a mixture of cheese + chilli flakes + herbs

Place the chicken breast in a Ziploc pouch .

Beat the chicken with a meat mallet . Don’t pound the breasts too hard. It could tear apart the breast.

Beat well till it flattens into a ¼ thick inch thin sheet without tearing .

Remove it carefully.

Sprinkle little salt and pepper.

Spread a layer of cheese mixture.

Roll it .

Now place it on a cling film and roll it into a log tightly as possible.{ it should be very tight ]

Tie the edges .

Boil it enough water in a pot.

Once the water starts boil , slide in the chicken .

Boil and cook for 10 mins.

Remove it carefully after 10 mins and let it cool .

Open the cling film.

And remove the cooked chicken.

Apply 1 tbsp olive oil + little salt + pepper.

Heat olive oil in a grill pan .

Fry the chicken roll for 7 to 8 mins .

Roll and fry from all sides till evenly cooked.

I have added teriyaki marinade while frying . You can use any marinades Or  fry it plain.

Aloo it to cool Before slicing.

Slice it into roundels .

Serve with any salads/ dips/ Sauces /any stir fries /pastas /mashed potato etc.

NOTE

  1. Instead of boiling , you can directly apply any marinade and fry it or bake it or grill it
  2. You can use any stuffing like paneer /cheese /Fried caramelised onions /spinach /Bacon mushrooms etc
  3. After boiling you can marinate it with tandoori tikka masala for Indian taste and then fry it .
  4. You can refrigerate the boiled chicken and use it later .
