RASMALAI RABDI BOX CAKE

RASMALAI RECIPE – Rasmalai recipe

I have used store bought rasmalai .I have used the ras from it to soak the cake .

If you want , you can make rabdi and use for soaking .

if using rabdi then we can use gulab jamun instead of rasmalais.



INGREDIENTS FOR THE CREAM LAYER

  • 50 ml Whipping cream
  • Rose essence 2 drops
  • 2 tbsp  Sugar powder
  • Yellow food colour 2 drops

METHOD
Take whipping cream in a bowl and beat it until it doubles .
Add rose essence + icing sugar + food colour and beat until soft peaks form.
Cover and refrigerate till use .



INGREDIENTS FOR THE EGGLESS  CAKE

  • ¾ cup Maida [ 85 grms ]
  • 6 tbsp sugar powder [ 75 grms ]
  • ½ tsp Baking Powder
  • ¼ tsp Baking Soda
  • ¼ tsp Cardamom Powder
  • 35 ml Ghee [ 2 1/2 tbsp ]
  • ¼ cup Curd at room tempt [ 50 ml ]
  • 1/3  cup Milk [ 75 ml ]
  • Rose Essence 2 drops


METHOD

Preheat oven to 160C.
Mix together maida + sugar +  baking powder + baking soda + cardamom powder.
Add milk + ghee +  curd +  rose essence and mix well.
Pour the batter in a  small square tray  and bake it for 15 -20 minutes in the preheated oven.
Remove the cake, place on wire rack, allow it to rest for five minutes.
Flip the cake and allow the cake to cool completely.

 ASSEMBLING THE BOX CAKE

  • Rasmalai
  • thinly sliced almonds and pistas
  • Dried Rose Petals
  • Acrylic box from bakery shop [ 4” by 4” by 2.5” acrylic cake box ]

METHOD

Cut two square slices of the cake to fit the box.
Place one slice at the bottom of the box.
Pour some ras malai ras all over the cake. Allow it to soak a bit.
Add the rasmalai  and cream as the filling.
Add one more cake layer and pour the ras .
Top it with sliced rasmalai  +  rose petals + slivered nuts.
Cover and refrigerate overnight.
Serve it chilled.

INSTANT RABDI RECIPE [ If you dont want to use the ras ]

INGREDIENTS FOR THE  RABDI

  • 2 tbsp Condensed Milk
  • 2 tbsp Mawa
  • 100 ml Milk
  • Saffron a few strands
  • ¼ tsp Cardamom Powder

METHOD

Take mawa +  condensed milk + cardamom powder + saffron in a microwave bowl.

Mash and mix well.
Now add milk and mix well.
Microwave the mixture on high power for 30

Remove and mix , microwave again for 30 secs .

Remove and mix , microwave again for 30 secs .

Once it is done the milk will be  hot and the colour  changes colour.  Remove it and allow it to cool completely.
