HEALTHY BLACK URAD DAL VADA / KANDESHI UDID DAL VADA / TIRUPATI VADA

Rich in fibre, it aids in monitoring the portion of nutrients which get absorbed by the digestive tract. 2. Boosts Bone health: Get ample dose of calcium, iron, vitamin B and other bone-building minerals from the daily intake of urad dal.

Black  urad dal holds a high protein value than most of the legumes. It is also an excellent source of dietary fiber, isoflavones, vitamin B .

Healthy black urad dal vada / kandeshi udid dal vada / tirupati vada

INGREDIENTS

  • Whole or split black urad dal with skin / Skinless urad dal  – 1 cup
  • Green chilli – 1 finely chopped [ avoid if making for kids ]
  • Grated ginger – 1 tsp
  • Finely chopped  coriander leaves – 2 or 3 tbsp or few curry leaves torn
  • Freshly chrushed fennel seeds – 1 tsp
  • freshly crushed black pepper – 1/2 tsp [ optional ]
  • Salt to taste
  • oil to deep fry
  • Baking soda – a pinch [ optional ]

METHOD

Clean , wash , rinse and soak black urad dal in water for 5 to 6 hrs or overnight. If using whole urad dal soak for more time .

Add the soaked dal with skin and blend .

Grind it  without adding water [ if required 1 or 2 tbsp water ] NOTE – You won’t get a soft batter as when making vadas with the skinless urad dal and the ground vada batter will tend to be a bit coarse. This is okay. Do not add water hoping to make a softer batter, then you will not be able to shape the vadas and the vadas with soak up more oil while frying.

The batter will be thick and sticky.

Transfer it into a bowl .

Beat the batter well for 2 to 3  mins with clean hands . [ important step – I have used a beater for 1 min ]

Add coriander leaves + curry ,leaves + salt + grated ginger + fennel seeds and pepper pwdr + green chilli and mix well .

Add curry leaves and mix well.

Heat oil in a frying pan. Take small portion of batter and flatten it then make a hole in the center of the vada. If you are not able to shape then just drop a portion of batter in the hot oil like dahi vadas .

Slide one by one in the oil.

Turn and fry them until they golden brown and transfer it to a plate with paper towel.

Serve it hot with sauce / any dip / chutney / sambar.

NOTES

  1. We can just make plain vadas without adding any other ingredients .
  2. In Maharashtra they also add garlic and jeera .
  3. Adjust ingredients as per taste .
  4. We can also add finely chopped onions.
