HOMEMADE FRESH RED CHILLI SCHEZWAN CHUTNEY RECIPE

SCHEZWAN CHUTNEY MADE WITH FRESH RED CHILLI

INGREDIENTS

  • Deseeded fresh red chilli – 1 kg
  • Garlic finely minced – 1 cup tightly packed
  • Ginger – ½ cup
  • Coriander stems /celery finely chopped – ¼ cup
  • Oil – 1.5 cup
  • Vinegar – 4 to 6 tbsp
  • Ketchup – 6 tbsp
  •  Soya sauce – 3 tbsp
  • Sugar – 1 tbsp
  • Salt to taste
  • Ajinomotto or aromatic pwdr or soup cube  – 1 tsp
  • Water – 5 tbsp to grind

METHOD

Grind the deseeded chilli into a coarse paste  by adding water .

In a pan heat oil, add garlic + ginger celery / coriander stems .

Fry until aromatic, make sure not to brown .

Add in  chilli paste  and mix well.

Continue to cover and cook until the oil separates. [ 7 to 8 mins ]

Now add  tomato ketchup + sugar +  vinegar + soy sauce + ajinomotto  + salt.

Mix well making sure everything is well combined and the oil separates.

Cool and store it in an airtight container in the refrigerator. 

It can be served as a side dish for momos, parathas and rotis or used in making schezwan rice /dosa.
