MAHARASHTRIAN STYLE SWEET AND SOUR MANGO PICKLE
MAHARASHTRIAN STYLE SWEET AND SOUR MANGO PICKLE / AMBAT GOD TIKHAT KAIRICHI LONCHA

INGREDIENTS
- Chopped raw mangoes – 1 kg
- Ready made pickle masala – 100 grms
- Oil – 100 ml
- Salt – 25 grms
- Cardamom – 8 – 9
- Asafoetida – 2 tsp
- Cinnamon – 7 t0 8 pieces
- Clove – 8 – 9
- Sugar / jaggery – 300 grms
- Roughly crushed fennel seeds / saunf – 25 grms
- Black pepper – 15 nos
NOTE –
- The mango has to be raw – white in colour when chopped .
- You can use any brand pickle masala like kepra / Rambandhu / suhana / katdare etc
METHOD
Heat oil in a pan .
Add cardamom + cinnamon + black pepper + clove and let it splutter.
Give a nice mix and off the flame immediately . [ ingredients should not burn ]
Now add asafoetida + fennel seeds + salt + pickle masala and mix well.
Wait till the mixture becomes warm , now add sugar and mix well.
Add the mangoes and mix well so that the mangoes coat well with the pieces .
Once this mixture cools down fill it in a glass jar .
Keep aside for 12 to 15 days for the pickle to mature .
After 10 days , the sugar syrup forms a layer at the bottom and the oil floats on top .
NOTE-
- You can take a combination of sugar + jaggery .
- I have used hands while filling the pickle jar – you need to wash and wipe the hands well before using hands – theres should be no moisture , else use dry spoon.
