GUJARATI MOHANTHAL RECIPE

Mohanthal recipe

INGREDIENTS [ 1 cup – 200 ml ]

  • Besan / gramflour – 1 1/2 cup
  • Chirote rava / fine sooji – 1 tbsp [ optional – is added for grainy texture ]
  • Ghee – 3 tbsp hot .
  • Milk – 3 tbsp
  • Extra ghee – ½ cup
  • Sugar – 3/4 cup or as per taste
  • Water – 1/3 cup
  • Boiled milk – 1/4 cup
  • Cardamom / elaichi pwdr – a generous pinch
  • Chopped dry fruits as required for garnish [ pista /badam ]
  • Silver varak – 1 sheet [ optional ]
  • saffron – few strands [ optional ]

PREPARATION

  1. Sieve the besan + rava in a plate ,add 3 tbsp milk + 3 tbsp hot ghee and mix well . Rub with both clean hands till crumbly .
  2. Keep aside for just 10 mins under fan .
  3. Transfer this to a mixie jar .and blend it .Tou will get a grainy type of besan mixture.

METHOD

Heat ½ cup ghee in a thick bottom pan .

Once hot , lower the flame .

Add the besan and mix well .

Stir continously and fry till golden on medium flame . [ 12 mins ].

First the mixture will absorb all the ghee, as it gets roasted it will change colour and ghee will start oozing out . The mixture will become very loose .

Add the boiled milk and give a nice mix well .

Lower the flame .Stir and cook for 2 to 3 mins , till the mixture becomes a bit dry and off the flame .

Boil 3/4 cup sugar + 1/3 cup water + saffron till the sugar dissolves completely .Once the sugar dissolves , boil for few mins .[ 3 to 4 mins ] .We need 1 string consistency of the syrup .

Now gradually add the sugar syrup little by little into the besan mixture .

Keep stirring and mix well . There should be no lumps .Once the syrup is absorbed completely add the cardamom pwdr and mix well.

Allow it to cool for 20 mins . You should be able to touch the mixture .[ dont bring to room temperature ]

Immediately transfer to a tin / tray .

And flatten it gently with a spatula .

Spread a silver varak sheet .

Sprinkle chopped dry fruits evenly all over .

Allow it to cool for 3 to 4 hrs at room tempt or 1 to 2 hrs in fridge .Tastes better when kept overnight and the syrup is well absorbed by the besan .

Slice it with sharp knife into desired size and shape [ square / rectangle / triangle / diamond ] and serve .

NOTES

  1. You can refrigerate and use for a week .
  2. We can also add a pinch of nutmeg pwdr to the syrup .
  3. We can also add mawa or milk powder .
