MUTTON BONES SAMBAR RECIPE

SIMPLE MUTTON BONES SAMBAR

INGREDIENTS

  • 300 grms mutton bones
  • ¼   cup toor dal
  • 1 ½  sambar pwdr
  • ¼  tsp chilli pwdr
  • ½  tsp coriander pwdr  
  • ¼  tsp turmeric
  • 1 small onion or 8 shallots
  • 2 Garlic chopped
  • 1 slit green chilli
  • 1 big Tomato
  • Salt as needed
  • 1 tbsp oil
  • Freshly grated coconut – 2 to 3 tbsp
  • ½  tsp mustard
  • Pinch of  methi seeds
  • 1 red chilli broken
  • sprig curry leaves

PREPARATION

  1. Clean , wash and rinse the mutton bones well .
  2. Take mutton with bones + dal with enough water + salt + tomato + turmeric .
  3. Pressure cook on high flame upto 1 whistle, after the first whistle lower the flame and cook for 1 0 to 12 mins on lowest  .
  4. Once done open the cooker and mix well  .
  5. Adjust 1 ½  cup hot water . Depending on the consistency you want .Sambar thickens on cooling

METHOD

Heat oil in a pan .

add mustard seeds and let it crackle .

Add fenugreek seedsm and  red chill and give a mix .

Add curry leaves + onion +  garlic + slit chilli.

Stir fry till translucent .

Lower the flame and add freshly grated coconut and stir fry for a min .

 Add sambar powder and stir fry for few seconds.

Add muuton bones cooked with dal  and mix well .

Bring to a boil . Lower the flame and boil for 1 or 2 mins and off the flame

Finally garnish with coriander leaves.

The sambar thickens on cooling .

Serve hot with southindian breakfast items or rice .
