PAPDI ALOO BAIGAN KI SABJI
PAPDI ALOO BAIGAN KI SABZI
INGREDIENTS
- Papdi / flat beans – 150 grms[ stringed and chopped ]
- Brinjal – 2 sliced
- Potato cubes – 2
- Oil – 2 or 3 tbsp
- Jeera – 1 tsp
- Onion chopped – 1
- Tomato chopped – 1
- Ginger garlic paste – 1 tsp
- Red chilli pwdr – 1 ½ or 2 tsp or as per taste
- Turmeric – ¼ tsp
- Coriander pwdr – 2 tsp
- Asafoetida – generous pinch
- Sugar – ¼ OR 1/2 tsp
- Salt to taste
- Coriander leaves to garnish
METHOD
Heat oil in a pressure cooker.
Add jeera + ajwain and let it crackle.
Add onion and stir fry till translucent .
Add garlic + ginger paste and stir fry till raw smell leaves .
Add tomato and stir fry till oil separates .
Add turmeric + coriander powder + red chilly + garam masala + asafoetida + sugar and mix.
Stir fry for few seconds .
Add brinjal + aloo + papdi and mix well.
Stir and cook for 1 minute.
Add 3 or 4 tbsp water and mix well.
Close the lid of the cooker and cook upto 2 to 3 whistles.
Once the pressure release , give a mix .
Add coriander leaves .
Serve hot as a side accompaniment with roti, paratha, bhakris, jowar roti, bajri roti or dal rice.
