RICE KHEER IN COOKER / CARAMELISED RICE PUDDING
Rice pudding is a dish made from rice mixed with water or milk and other ingredients such as cinnamon, vanilla and raisins. Variants are used for either desserts or dinners. When used as a dessert, it is commonly combined with a sweetener such as sugar.
Caramel kheer is an innovative rice kheer recipe with sugar caramelized and added to the kheer recipe to render a delectable pink color and unique taste
INGREDIENT
- Basmati rice or ambe mor rice – 3 tbsp
- Sugar – 4 or 5 tbsp or as per taste
- Boiled Milk- 500 ml (2 cups)
- Dry fruits – 2 or 3 tbsp
- Green cardamom (crushed)-2
FOR CARAMEL
- Sugar – 1 tbsp
- Ghee – 1 tsp
METHOD
Soak the rice for 20 mins .
Drain the excess water and grind into coarse mixture. [ don’t make fine ]
Heat a cooker, add 1 cup milk [ 250 ml ] + rice mixture and mix well.
Pressure cook upto 1 whistle on medium flame .
Allow the pressure to release .
Open the cooker and give a gentle mix.
Add the remaining 250 ml milk .
Keep on medium flame.
Add sugar to taste + cardamom pwdr + dry fruits and give a mix .
Lower the flame and cook for 4 to 5 mins.
Don’t make it very thick , as the kheer will thicken on cooling .
Once done off the flame .
Kheer is ready to serve chilled or at room temperature .
FOR CARAMEL FLAVOUR AND PINK COLOUR
Heat 2 tsp of ghee + sugar in a small nonstick pan. When it starts bubbling and changes colour immediately add it to the kheer. [ don’t over cook , else it will burn ]
