Set dosa recipe
PERFECT SET DOSA / FLUFFY POROUS DOSA RECIPE
It got its name as set dosa because it is served in a set of 3 to 4 dosas at a time in hotels.
INGREDIENTS
- Parboiled rice – 1 cup
- Raw rice – 1 cup
- Poha – 1/2 OR 1 cup
- Fenugreek seeds – 1 tbsp
- Whole skinless Urad dal – 1/2 cup
- Salt as per taste
PREPARATION.
Wash and soak the rice for 5 hrs.
Wash fenugreek seeds and urad dal soak it for 3 – 4 hrs.
After soaking ,if time provides refrigerate the soaked dal for 1 hr before grinding .
Before grinding wash the poha and soak for 10 mins
Grind all the soaked ingredients to a smooth batter of pouring consistency [not very thin as we don’t have to spread it] by adding little water.
Add salt to the batter and mix well with clean hands . Atleast beat the batter for 5 minutes .[ you can use a beater of you want ]
Keep it for over night fermentation or for 10- 12 hrs. [VERY IMPORTANT]
After fermentation the batter increases.
Set dosa batter is ready.
METHOD
Heat a non stick pan or a dosa tava.
Drizzle few drops of oil.
Wipe it with a wet cloth.
The pan has to be hot , while pouring the batter .
Water should sizzle when sprinkled on hot pan.
Pour a ladle of the batter in the middle and gently spread the batter to form a thick dosa . [ 5 inches circle]
Don’t make thin .
Drizzle little oil on the edges and top.
Cook on medium flame .
You will see many pores forming.
Cook for sometime on medium flame.
See that it does not burn from down.
Flip on other side and cook .
NEVER PRESS THE DOSAS WHILE COOKING .
Porous set dosa is ready.
