sINDHI TURNIP RECIPE

SHALJAM KA SALAN / SINDHI GOGROO JO BOR / SHALGAM KI BHAJI / GOGRU JI BHAJI SINDHI STYLE

This dish is largely associated with Punjabi cuisine. Turnip/Shalgam is a member of radish family but tastes much milder. Chunks of this winter vegetable, are cooked in simple everyday flavors of tomato and onion. This side dish is a satiating and comfort food to cook-up during winters.

INGREDIENTS

  • 250 gms turnips
  • 2 medium onions finely chopped
  • 1 green chilly chopped
  • 1 tbsp  ginger crushed
  • 6  cloves garlic  chopped
  • 3 medium tomatoes finely chopped or pureed
  • ¼  tsp turmeric powder
  • 1 tsp red chilly powder
  • 1 tsp coriander powder
  • Salt to taste
  • 1/4 tsp garam masala
  • coriander leaves

NOTE – instead of regular garlic , use green garlic chopped

METHOD

Peel and cut the turnips into small cubes.

Add 1-2 tbsp oil in a pressure cooker.

Add finely chopped onions and sauté till light pink.

Add ginger and garlic . Sauté for a few seconds and add the drained turnips.

Sauté well till the turnips shrink a little.

Add tomato purée + salt  and sauté again till the moisture dries up.

Add red chili powder + coriander powder + turmeric and mix well.

Now 1 cup water, and close the pressure cooker.

Cook upto first whistle on medium flame.

Simmer the gas to lowest and cook  for 8 to 10 mins.

Open the cooker once the pressure is released.

Check the turnips, they should be done.

Mash the cooked turnips using a wooden masher.

Finally sprinkle garam masala and coriander leaves.
