SOUTHINDIAN STYLE MORINGA SCRAMBLED EGG / EGG BHURJI WITH DRUMSTICK LEAVES

INGREDIENTS

  • Egg – 3
  • Milk – 1 tbsp
  • Moringa leaves – 1 cup
  • Oil – 1 tbsp
  • Onion finely chopped – 1 big
  • Green chilli – 2 or as per taste
  • Curry leaves – few
  • Freshly grated coconut – 2 tbsp
  • Salt to taste

METHOD

Beat the eggs with the milk and keep aside .

Heat oil in a pan .

Add onion + green chilli + curry leaves and stir fry till translucent .

Add the chopped moringa leaves + salt and mix well.

Stir fry for 3 to 4 mins till the leaves get cooked and shrink .

Add the beaten egg and mix well.

Adjust salt as needed.

Stir and cook till done.

Finally add coconut and give a stir. Off the flame and serve hot as a side dish
