stir fried malabar spinach recipe
STIR FRIED MALABAR SPINACH RECIPE
Malabar spinach is high in vitamin A, vitamin C, iron, and calcium. It is a rich source of soluble fibre and hence good for treating constipation. It has a high amount of protein for a plant and is also a good source of magnesium, phosphorus, and potassium. Another good reason to eat malabar spinach is that it has a good amount of antioxidants, particularly beta carotene and lutein.
INGREDIENTS
- Malabar spinach leaves chopped – 3 cup
- Oil – 1 tbsp
- Jeera – 1 tsp
- Onion finely chopped – 1 big
- Garlic finely chopped – 2 tsp
- Green chilli – 2 or 3
- Salt to taste
- Freshly grated coconut – 3 or 4 tbsp
METHOD
Heat oil in a pan and crackle the jeera .
Addd onion + garlic + green chilli and stir fry till translucent.
Add the leaves and stir fry for 6 to 7 mins till all moisture evaporates.
Add salt and give a mix.
Finally add the coconut and give a mix.
Immediately off the flame , no need to cook after adding coconut .
Serve as a side dish .
