SWEET BENGALI MAVA SAMOSA RECIPE

Shingara is nothing but Samosa in Bengali cuisine. .Khirer Singara or Sweet Mewa Samosa is a popular Bengali sweet.It is a deep fried pastry with a mewa filling then soaked in sugar syrup.
The filling can be varied with different combinations of mewa, coconut, semolina, dried fruits, nuts or almonds.
FOR THE COVERING –
- Maida – 1 cup
- Ghee – 1 tbsp
- Pinch of salt
- Oil To Deep Fry
METHOD
Take maida + ghee + salt .
Make it a crumbly mixture like bread crumbs .
Gradually add water and make a crumbly dough .
Cover and keep aside for one hour.
FOR THE STUFFING –
- Mawa – ½ cup
- Ghee – 1 tsp
- Cardamom Powder – a pinch
- Chopped Raisins , Pistachios , cashew ,badam – 3 or 4 tbsp
- Sugar – 1 tbsp
METHOD
In a pan heat ghee , add raisins + cashew + pista + badam and stir fry for a min .
Add mawa and fry till colour changes lightly .
Add in sugar and mix well .
Add in cardamom powder .
Off flame and allow it to cool completely.
FOR THE SUGAR SYRUP
- Sugar – 1 cup
- Water – ½ cup
- Cardamom Powder – ¼ tsp OR few drops of rose essence
- Few strands of kesar / saffron
METHOD
In a pan mix together sugar and water + saffron and bring it to boil.
Allow it to boil until it reaches single thread consistency.
Finally mix in the cardamom pwdr or rose essence
MAKING THE SAMOSAS
Heat oil in a pan.
Divide the dough into equal portions.
Roll each into a oval shaped disc and slice it into two.
Make a cone, apply water at the edges to stick the cone.
Fill the cone with mawa mixture.
Apply water along the edges and stick them together to form a samosa shape.
Deep fry them until light golden on low flame .
Drain and remove from oil and add it in the warm syrup for 30 mins .
Remove onto a grill so that the excess syrup drips off .
Garnish with silver varak or finely chopped pistas .
Allow it to cool completely before storing .
Enjoy Misti Kheerer Singara during festive season .
NOTE – Give at least 1 hour standing time before eating the sweet for best results
