Sweet vermicelli recipe / MEETHI SEVAI RECIPE
MEETHI SEVAIN / SEVIYAN / SWEET VERMICELLI /MEETHI SEVIYAN
INGREDIENTS [ 1 cup – 250 ml ]
- Fine roasted vermicelli – 1 cup
- Ghee – 1 tbsp
- Cardamom powder – ¼ tsp
- Soaked and sliced almonds – 2 tbsp
- Sugar – ½ cup or as per taste.
- Water or milk or water + milk – 1 cup
- Rose water / kewra water – 1 tsp OR 1 or 2 drops of roose essence
METHOD
Heat ghee in a pan .
Add the vermicelli and fry till golden brown [don’t burn]
Add water ,mix well and cook for minutes 1 min. [ you can add 1 or 2 tbsp extra water for more soft sevais ]
Add sugar + cardamom pwdr + rose water.
Stir ,cover and cook for few minutes on lowest flame till complete water is absorbed .
Off the flame and keep aside for few mins .
Stir with a fork. Garnish with chopped fried or plain dry fruits .
VARIATION
Make sugar syrup. Add the fried vermicelli cook till done. Add the dryfruits + cardamom pwdr + essence .
NOTES
- You can also add 1 clove ,+ tiny piece of cinnamon while frying the vermicelli.
- While cooking add saffron or yellow colour. [ optional ]
- You can also add grated khoya towards the end for rich flavour.
- I have used fine vermicelli .
- You can also use bambino. water quantity and cooking time will differ .
- Instead of water you can use milk.
- Quantity of water depends on the size of the vermicelli.
- Cook on low flame.
- You can also add pista and raisins.
- Boil the almonds for 1 min or soak them in hot water .Peel and slice .
- Instead of rose water you can add kewra essence.
