Sweet vermicelli recipe / MEETHI SEVAI WITHOUT MILK RECIPE

MEETHI SEVAIN / SEVIYAN / SWEET VERMICELLI /MEETHI SEVIYAN

INGREDIENTS [ 1 cup – 250 ml ]

  • Fine vermicelli / sevai – 1 cup
  • Ghee – 1 tbsp
  • Cardamom powder – ¼ tsp
  • Soaked and sliced almonds or any dry fruits – 2 tbsp
  • Sugar – 6 tbsp or as per taste.
  • Water or milk or water + milk – 1 cup
  • Rose water / kewra water – 1 tsp OR 1 or 2 drops of roose essence

METHOD

Heat ghee in a pan .

Add the vermicelli and fry till golden brown [don’t burn]

Add hot water ,mix well and cook for minutes 1 min till water evaporates . [ you can add 1 or 2 tbsp extra water for more soft sevais ]

Add sugar + cardamom pwdr + rose water.

Stir ,cover and cook for few minutes on lowest flame till complete water is absorbed .

Off the flame and keep aside for few mins .

Stir with a fork. Garnish with chopped fried or plain dry fruits .

Give resting time of 8 to 10 mins , before serving .

VARIATION

Make sugar syrup. Add the fried vermicelli cook till done. Add the dryfruits + cardamom pwdr + essence .

NOTES

  1. You can also add 1 clove ,+ tiny piece of cinnamon while frying the vermicelli.
  2. While cooking add saffron or yellow colour. [ optional ]
  3. You can also add grated khoya towards the end for rich flavour.
  4. I have used fine vermicelli .
  5. You can also use bambino, water quantity and cooking time will differ .
  6. Instead of water you can use milk.
  7. Quantity of water depends on the size of the vermicelli.I have used fine sevai .
  8. Cook on low flame.
  9. You can also add pista and raisins.
  10. Boil the almonds for 1 min or soak them in hot water .Peel and slice .
  11. Instead of rose water you can add kewra essence.
