Til revdi is a traditional Indian brittle recipe generally prepared during the festivals of Lohri and Makar Sankranti (kite flying festival).
Sesame seeds or til are known to be an excellent source of protein, which helps increase your metabolic rate and curbs hunger, thereby avoiding excessive calorie consumption and aiding weight loss. In fact, fibre-rich foods can help you lose fat but maintain muscles.
These are a delectable winter delicacy that is enjoyed throughout the winter season. This is because sesame seeds and jaggery both give energy, nourish us, and keep the body warm during winters.
During October – December, because of the Earth’s movement, the sun starts to move towards the south (Dakshin), resulting in variations in the length of the days and night. And because of shorter days, harsh weather conditions, and limited sunlight, crop harvesting comes to a standstill, and this phase in Hindu religion is called Dakshinayan or winter solstice.
But as January sets in (around 13th or 14th), the sun begins its Northward journey (Uttar), which marks the end of the winter gloom. This Northward transition into the Capricorn constellation (Makar in Sanskrit) is called Uttarayan in Hindi or summer solstice.
Therefore, this change of seasons is celebrated all over India with different regional names such as LOHRI ,MAKAR SANKRANTI , BIHU , PONGAL ……,
Whether you are celebrating the warmth of Lohri or enjoying the kite festival ( Makar Sankranthi), or just conveying greetings of Pongal, some foods hold special significance.
To celebrate this occasion, foods like til (sesame seeds), gur (jaggery), peanuts, gajak, and popcorn are fed to the fire as part of the harvest ritual.
All over India, this harvest festival is celebrated in a different custom. In the North, especially Punjab, people celebrate Lohri by singing and dancing around a bonfire. They thank God for nature’s bounty, prosperity, and a good harvest season.
INGREDIENTS
- 1 cup roasted sesame seeds or til
- 1 cup jaggery
- 1 teaspoon ghee
- Few drops of rose essence or ¼ tsp cardamom pwdr
- generous pinch of baking soda
METHOD
Dry roast sesame seeds for 5 mins on a low flame until crisp . Keep it aside. [ colour shud nt chasnge ]
Heat ghee in a pan, add chopped jaggery + 1 tbsp water . Let it cook on low flame until it melts.
Stir continuously and cook on low flame till the syrup colour changes. [ 8 to 10 mins ]
NOTE – In bowl of water,add a drop of jaggery to check if it is brittle and solidifies.
add cardamom pwdr + baking soda and mix well. it becomes frothy and colour lightens .
Add sesame seeds and mix well. immediately switch off flame.
mix well and transfer to a greased platform and keep mixing .
Take a small portion and roll it with greased hands and flatten it .
Allow to cool for 30 mins and store in a dry jar.
Notes
- Place the rewadi mix pan in hot water bowl to keep the mixture warm while rolling.
- Make small batches of rewari as the mixture needs to be hot/warm while you are shaping them, else if they solidify , its not that easy to reheat them and mold them again.
