VEG MACARONI SALAD

MACARONI SALAD

FOR DRESSING:

  • 1 small onion
  • 1 big πŸ… tomato
  • 8 – 10 garlic cloves
  • 8 cashews 
  • 1 1 /2 tbsp or as per taste πŸ‹ lemon juice 
  • 2 tbsp olive oil
  • 1 tsp kashmiri mirch powder
  • 4 – 6 tbsp or as per taste tomato sauce
  • Β½ cup fresh cream
  • 3 or 4 tbsp milk
  • Salt to taste

METHOD:

Grind  all the ingredients of dressing accept cream and milk in a grinder jar to a fine paste adding a little water if required .

Lastly add cream and blend on pulse mode. (Don’t churn too much)

INGREDIENTS

  • 1 1 /2 cups raw macaroni 
  • Onion -1 finely chopped
  • Cucumber – 1 finely chopped
  • Tomato- 1 finely chopped
  • Capsicum -1finely chopped
  • Paneer – 150 gms small cubes
  • Lettuce –  1/2 cup shredded ( optional )

METHOD

Boil 1 1 /2 cups of macaroni , drain the water and keep aside.

Take boiled macaroni + paneer + veggies in a big bowl. Add the dressing and mix well gently with hands. 

The dressing should be enough to coat all the veggies and macaroni. 

Add milk and adjust the consistency .

Refrigerate for sometimes before serving .

Garnish with roasted crisp skinless peanuts while serving .

NOTE –

  1. After refrigerating it becomes more thick so add milk accordingly
  2. We can also add 1 tsp mixed herbs or oregano .
  3. We can also add 1 or 2 tbsp of mayo .
  4. Instead of paneer we can add boiled chicken or boiled egg whites
