MALABAR STYLE NEY PATHIRI /NEY PATHAL / PORICHA PATHIRI RECIPE/KERALA STYLE RICE FLOUR POORI

Ney Pathiri-Ney Pathal-Poricha Pathiria is a super delicious, rich Malabar Specialty.It is a deep-fried rice Pancake with crushed coconut,onion,cumin seeds.

These are very similar to Maharashtrian kombdi vade –

INGREDIENTS

  • 1 Cup Rice Flour or use Puttu podi 
  • 6 tbsp  freshly Grated Coconut
  • 5  Shallots / Small Onions
  • ½  tsp Jeera
  • ½  tsp 
  • Roughly 1 cup boiling hot water
  • Salt to taste

METHOD

Take grated coconut + cumin seeds + fennel seeds + shallots and grind into coarse mixture .

Take rice flour + salt in a big plate and combine well, add the crushed grated coconut mixture to it and mix well.

Add the boiling water to rice flour mixture little by little.

 stir briskly with wooden ladle spoon and keep stirring until it moistens evenly and it comes together and there are no lumps. 

Once you are able to handle the hot dough start kneading with hands into smooth firm dough .

 If needed wet/dip your hand in warm water and knead –  If the mixture is too dry.

Grease your hands and take a small lemon sized ball of the dough and roll into smooth balls

Flatten slightly and make small thick pooris , if the edges are uneven then use a glass or cookie cutter for perfect shape  .

You can use a poori press .

Heat oil in a kadai , when hot slide in the pathiri .

Allow it puff on medium to low flame As soon as it puffs up, flip it over and fry both sides until light golden colour and crispy. Serve with chicken or mutton or egg curry or any veg curries .
