BAKED GARLIC POTATO WEDGES RECIPE

INGREDIENTS

  • 3 large potatoes
  • 2 tbsp olive oil
  • 1 tbsp minced garlic
  • Salt to taste
  • 1 tsp black pepper pwdr or chilli flakes as per taste
  • 2 or 3 tsp mixed herbs / oregano / pizza spice

METHOD

Wash the potato well .

Use a sharp knife to cut the potato in half lengthwise. Place the cut side down, then cut it in half lengthwise again to make quarters. Cut each quarter in half again to make eight potato wedges.  Make sure they are about the same thickness and size .

Boil the potatoes in enough water+ salt upto 50 % done . Drain the water completely .

Preheat oven to 390°F (200°C).

Take all the ingredients one by one and  toss together to coat evenly.

Arrange potato wedges in a single layer on a large baking tray.

Bake for 30 to 35 minutes, turning wedges half way through baking time, until golden, crisp and cooked through completely .

Sprinkle with finely chopped coriander leaves / parsley /  parmesan cheese to serve.

Serve hot with any dip or sauce .

NOTE-

We can bake the potatoes directly without boiling.But doing so the potatoes shrink .There is a difference in texture.
