COCONUT POHA RECIPE
COCONUT POHA
INGREDIENTS
- Poha – 2 cup [ medium ]
- Freshly grated coconut – 5 to 6 tbsp
- Onion finely chopped – 1 big
- Green chilli chopped – 2 or 3 or as per taste
- Sugar – ½ tsp [ optional ]
- Oil – 2 tbsp
- Mustard seeds + jeera – 1 tsp
- Curry leaves – few
- Lemon juice – 1 tsp
- Finely chopped coriander leaves for garnish
- Peanut – 3 or 4 tbsp
- Salt as per taste
PREPARATION
- Keep all ingredients ready before you start .
- Take the poha in a strainer as shown in the video .Clean ,wash and rinse the poha twice or thrice. Drain the water completely . Keep aside for 10 mins.After 5 mins , give a mix and check , if it is dry then sprinkle little water .
METHOD
Heat oil in a pan add the peanuts and fry till golden . Remove and keep aside .
Now add mustard seed + jeera and allow to crackle.
Add green chilli + curry leaves + onion and give a mix .
Stir fry for a min . Dontr over cook the onions – it should have a crunch .
Add salt + sugar and give a mix .
Add soaked poha and mix well , till complete poha is coated .
Lower the flame .Stir and cook for 1 min.
Add the coconut and mix well
Finally add the finely chopped coriander leaves + fried peanuts and off the flame.
NOTE – while serving sprinkle raw onions + roasted jeera pwdr and drizzle the lemon juice as required .
Serve hot.
NOTES
- Don’t brown the onions. It should have the crunch .
- If the poha is not soaked well, then drizzle few drops of water , cover and cook on lowest.
