DAHI WALI GAWAR KI SABJI

DAHI WALI GAWAR KI PHALI/ GAWAR KI SABZI /CLUSTER BEANS COOKED WITH CURD /  GAWARFALI KI SABZI / CLUSTER BEANS GRAVY / DAHI KI SABZI RECIPE

Cluster beans lower your LDL, or bad cholesterol, levels thereby improving your heart health and lowering the risk of a heart attack. They also contain fibre, folic acid and potassium, which prevent you from developing heart complications.


1. Very rich in dietary fiber, cluster bean offers heart health benefits. It also helps in maintaining a well digestive system.
2. It also contains Vitamin C that makes bones and teeth stronger.
3. The amount of folic acid content is essential for pregnant women.

INGREDIENTS

  • Cluster beans / Gawar – 200 grms
  • ½  tsp Ajwain /Carrom Seeds
  • Salt to taste
  • ¼  tsp Turmeric Powder
  • 2  tbsp Oil
  • 1 tbsp Besan /Chickpea Flour
  • 1 tbsp  ginger garlic Paste
  • ½  tsp turmeric Powder
  • 1 tbsp Coriander Seeds Powder
  • ½  tsp Jeera Powder
  • 2 tsp or as per taste Red Chilli Powder
  • ½  tsp Garam Masala Powder
  • 1 cup [ 200 grms ] Curd
  • 1 tsp jaggery / sugar
  • Coriander leaves to garnish

PREPARATION

Use tender beans . Wash and pat dry the beans.Cut and discard the top and the tail of cluster beans. Chop into 2.

Heat 1 tsp oil in a cooker , add ajwain and let it crackle.

Add the beans and stir fry for a min.

Add ¼ cup water + little salt and pressure cook upto 1 whistle .Once done remove and keep aside.

Take all the masala powders in a small bowl add ¼ cup water and mix well .

METHOD

Heat 2 tbsp oil in a pan .

Add the besan and stir fry for 1 min on low flame till it becomes golden.

Add ginger garlic paste and stir fry for few seconds.

Lower the flame and add the masala paste and stir fry for amin till raw smell leaves.

Add the cooked beans and mixwell.

Stir fry for few seconds .

Add ¼ or ½ cup water and mix well .

Add salt to taste and jaggery .

Mix well and add the beaten curd , mix well .

Stir and cook for few seconds.

Cover and cook on low flame for 2 to 3 mins .

Finally garnish with coriander leaves and off the flame.

Serve hot with Jowar /bajri / ragi bhakri or phulkas or chapati or roti Roti, Wheat Roti or Bajri Roti.
