EASY CHINESE KUNG PAO CHICKEN
EASY KUNG PAO CHICKEN RECIPE
Kung pao chicken is a popular Chinese restaurant dish
Kung Pao chicken, also transcribed Gong Bao or Kung Po, is a spicy, stir-fried Chinese dish made with cubes of chicken, peanuts, vegetables, and chili peppers.
The dish tastes bit spicy , sour and is sweet and a little nutty. Peanuts added to the meal are responsible for the nuttiness of the dish.
NOTE – you can adjust ingredients as per your taste.
INGREDIENTS – Marinate the chicken with the below given ingredients and refrigerate for minimum 30 mins or more
- Chicken boneless preferably thigh potion cut into small cubes – 500 grms
- 1 tsp vinegar
- 1 tsp pepper pwdr
- 1 tbsp soya sauce
- 1 tsp corn flour
- Salt to taste
OTHER INGREDIENTS
- Oil – 2 or 3 tbsp
- 1 ½ tbsp finely minced garlic
- 1 tbsp finely minced ginger
- Red and yellow bell pepper / capsicum / onion cubes –
- Crispy roasted skinless peanut – ¼ cup or as needed
- 2 or 3 tbsp Finely chopped spring onion greens
INGREDIENTS FOR THE SAUCE – Mix all the ingredients in a bowl and keep aside .
- ½ cup chicken stock or plain water [ use ½ maggi cube ]
- 1 tbsp soy sauce
- 2 tsp vinegar
- 1 tbsp ketchup
- 1 ½ or 2 tbsp chilli sauce
- 2 or 3 tsp sugar
- 1 teaspoon cornstarch / corn flour
METHOD – I have done the whole cooking process in one pan .
Heat a pan with oil .
Add the capsicum / bell pepper / onion cubes .Stir fry for few mins .Remove and keep aside .[ don’t overcook till soft it should have the crunch .
In the same pan add the marinated chicken and stir fry for 7 to 8 mins till done.
Remove and keep aside.
Again in the same pan add the ginger and garlic and stir fry for few seconds.
Add the sauce mixture and mix well.
Bring it to a boil .
Add the fried chicken and mix well .
Stir and cook for 1 or 2 mins till the sauce becomes glazy and shiny .
Now add in the veges and give a mix .
Off the flame .
Finally add the peanuts and spring onion .
Serve hot.
Goes well as a stuffing for BAO – BAO STEAMED BUNS RECIPE
Or as a s ide dish for fried rice and noodles .
