Healthy methi dal

METHI DAL

Fenugreek has benefits for lowering blood sugar levels, boosting testosterone, and increasing milk production in breastfeeding mothers. Fenugreek may also reduce cholesterol levels, lower inflammation, and help with appetite control.

Toor dal is an incredible source of proteins, carbs and dietary fibre needed for growth and development. Adding toor dal in your diet helps to meet your demands of iron and calcium while being a good source of folic acids promotes foetal growth and averts congenital birth defects of the foetus.

without tempering

INGREDIENTS

  • Fresh Fenugreek leaves/methi chopped – 2 cups
  • Toor dal – ½  cup
  • Onion – 1 finely chopped
  • Garlic grated or crushed  – 1 tbsp
  • Green chilli – 2
  • Tomato finely chopped – 1big
  • Salt as required
  • Turmeric powder – ¼  tsp
  • Chilli powder – ½  tsp
  • Coriander powder – 1 tsp
  • Oil – 1 tbsp
  • Ghee – 1 or 1 ½  tbsp
  • Cumin seeds – 1 tsp
  • Hing/asafoetida – a generous pinch
  • Kashmiri red Chilli powder – ½ or 1 tsp

PREPARATION

Soak the dal for 15 mins.

Take the dal = water + salt + turmeric in a pressure cooker and cook upto 3 to 4  whiles till soft and mushy .

Once the pressure release , open the cooker and mash the dal well, Add 1 cup hot water and mix well. [ adjust water as per the consistency you want ]

METHOD

Heat 1 tbsp oil in a pan , add onion + green chilli and stir fry till translucent.

Add tomato + little salt and stir fry till tomatoes soften.

Lower the flame and add ½ tsp chilli pwdr + coriander pwdr .

Stir fry for few seconds.

Add the leaves and mix well .

Stir and cook till the leaves shrink completely .

Add the dal and give a nice mix.

Adjust salt and hot water if needed.

Bring to a boil and off the flame.[ stir inbetween ]

Off the flame and transfer to a serving bowl.

TEMPERING

Heat 1 tbsp ghee in a small pan .

Add jeera and let it crackle.

Add crushed garlic + curry leaves and stir fry till golden and off the flame .

After 2 – 3  seconds add kashmiri chilli powder and mix well.

Pour this tempering over the dal .

Delicious and flavourful methi dal is ready to serve.

Serve it with plain steamed rice,pulao,rotis ,parathas or chapatis with any side accompaniments .
