Alasanda vada or black eyed pea fritters are very popular in Andhra .A crispy fritter made with black eyed peas, fresh onions, curry leaves and Indian masala.
Bobbarlu have high nutritional values so they are used to make Alasanda vada or lobia vada in karnatatka and Andhra.
LOBIAS are well known health food .
It is a crispy snack prepared during sankranti in Andhra Pradesh .Also these are sold as street food .
The black-eyed pea or black-eyed bean is a legume grown around the world for its … In Andhra Pradesh they are known by the name ‘alasandalu‘ and are used for variety of recipes most popularly for ‘vadas‘.
Andhra’s famous Vada that is Alasandalu /black-eyed pea fritters which is very rich in protein and it is easy to prepare. This is specially made during the festive season.
INGREDIENTS
- Alasandalu / black eyed pea / lobia – 1 cup [ 200 grms – use small ones ]
- Finely chopped onion – 2 medium size [ 1 cup ]
- Green chillies – 4 or 5 or as per taste
- Ginger – small piece
- Curry leaves – 10 or 12
- Jeera – 1/2 tsp
- Fennel seeds – 1 tsp
- Rice flour – 1 tbsp for binding
- Coriander leaves – 1/2 cup [ optional ]
- Salt as per taste
- Oil for deep frying

METHOD
Take 200 gms of chavli (LOBIA) and soak it for 8 hours in water.
Drain all the water through sieve.
In a mixer jar add drained chavli, 1/2 teaspoon jeera, fennel seeds , 4 – 5 green chillies or as per taste and a small piece of ginger, don’t add any water, grind it on pulse beat and make a coarse paste for best results grind in small batches.
Take out the paste in a bowl, add two medium size finely chopped onions, salt to taste, 10 -12 finely chopped curry leaves and 2 tablespoons of rice flour for binding, mix everything well.
In a pan heat oil for deep frying.take small amount of mixture in palm and make a shape of vada and slide gently in oil. Fry it on low to medium flame.fry till golden brown and remove on kitchen towel.
Non vegetarians serve with chicken gravy , else you can serve it with coconut chutney or sauce or any dips .
NOTE – if the vada breaks , then add more rice flour for binding .
BAKE – You can also bake these vadas for 12 to 15 mins on one side and 5 mins on other side at 220 * C in a preheated oven .
