MINT CHUTNEY FOR IDLI AND DOSA

INGREDIENTS

  • Mint leaves – ½ cup [ fresh ones ]
  • Freshly grated coconut – ½ cup
  • Roasted gram dal / chutney dal / dariya dal – 1 tbsp
  • Green chilli – 1 or 2 or as per taste
  • Garlic – 1 clove
  • Tamarind – a tiny piece [ optional ]
  • Oil – 1 tbsp
  • Mustard seeds + urad da – 1 tsp
  • Curry leaves – few
  • A pinch of turmeric pwdr [ optional to enhance the colour ]
  • Salt to taste
  • Warm water to grind – as required
MINT CHUTNEY FOR IDLI

METHOD

Heat 2 tsp oil in a pan and fry the mint leaves till it shrinks completely and complete water evaporates .

Remove and allow it to cool .

Take the fried mint leaves + coconut + chilli + garlic + salt + turmeric + tamarind + roasted gram dal in the chutney jar and grind it to a smooth or coarse paste by adding warm water .[ water as per the consistency you want ]

Heat 2 tsp of oil in the tempering pan ,add mustard seeds + urad dal + curry leaves and fry for few seconds and pour over the chutney .

Mix well and serve .
