Pasta in white sauce recipe
PASTA IN WHITE SAUCE- SIMPLE, EASY AND FULL OF FLAVOR
Pasta is a type of food typically made from an unleavened dough of wheat flour mixed with water or eggs, and formed into sheets or other shapes, then cooked by boiling or baking.
White sauce is also known as béchamel sauce and has it’s origin in French cuisine. Classic béchamel sauce is made with butter, flour and milk.
White sauce pasta is lighter and not heavy and is a satisfying comfort food. White sauce pasta is simply cooked pasta mixed with a silky smooth & decadent white sauce .
INGREDIENTS
- Penne pasta – 1 cup [ uncooked ]
- Mushroom thinly sliced and stir fried – 1/4 cup
- Bell pepper and capsicum chopped small – 1/4 cup
- Boiled corn – 1/4 cup
- Butter – 1 ½ tbsp + 1 tsp olive oil
- Garlic – 1 tbsp finely chopped or minced
- Maida / all purpose flour – 1 tbsp
- 1 cup of stock made from maggi veg or non veg cubes OR make 1 cup stock at home
- 2 cup milk
- Oregano / mixed herbs – 3/4 tsp
- Chilli flakes – 1/4 tsp
- Salt to taste [ be careful as we are adding stock ]
- Pepper powder – 1/4 tsp
- Cheese cubes grated – 3 cubes
PREPARATION
- Make stock by dissolving 1 cube in 1 cup of hot water , mix well . Keep aside.
- Cook pasta with enough water + 1 tsp oil and salt. Drain and keep aside. [ Dont over cook ]

Heat a non-stick pan.
Add the butter + oil.
Add the garlic and fry. [ colour should not change , don’t burn the garlic]
Add the flour and cook for 1 min by continously stirring on low flame.
Add the stock and mix well . See that no lumps are formed .
Add milk , mix well , stir and cook.
Keep stirring and cook till sauce boils and thickens.
Add salt, pepper pwdr,chilli flakes and cheese and mix well till the cheese melts completely .
Add the cooked pasta + stir fried veges and mix well till the pasta gets coated well with the sauce.
Off the flame and serve immediately .
Serve immediately with toasted garlic bread.
NOTES
- Don’t make the sauce thick as on cooling it will become more thick.
- You can add any stir fried veges like any coloured capsicum, mushroom , onion, corn, brocolli ,babycorn ,carrot etc while adding the pasta.
- Non vegetarians can add boiled shredded chicken.
- Add more cheese while serving if required .
- Cook on low flame.
- If the sauce gets thick and dry add few tbsp of hot milk and heat again.
- You can use other varieties of pasta.
- Spaghetti goes very well with this sauce.
- Chilli flakes and oregano or mixed herbs enhances the flavour.
- Keep stirring while cooking.
- Instead of plain flour you can add corn flour mixed in milk or even use wheat flour .
- Don’t overcook the pasta. It should be soft and firm.
- *If it becomes thick add milk and adjust the seasoning again .
- You can add sauted spinach. – Spinach corn pasta
