Perfect dosa recipe

1 – JINI DOSA – Dosa fully with the goodness of veges, cheese , paneer etc
INGREDIENTS
- Dosa batter – Refer to my recipe of – idli batter. [ Only instead of grinding it thick make it little thin]
- Finely grated cabbage. ,beetroot , carrot, capsicum , paneer and cheese.
- Finely chopped onions.
- 1 Tbsp of tomato sauce
- 1 tsp of chilli sauce
- 1 tsp butter
For Potato stuffing – Potato filling for masala dosa
- 1 onion sliced
- 1 cup cooked and mashed potato.
- 1/4tsp Turmeric pwdr
- Salt as per taste
- 1Tbsp oil
- 2 green chilli chopped.
- 1 tbsp finely chopped coriander leaves.
Method
Take a pan add oil then sauté the onion till translucent,then add green chilli , turmeric and salt.
Add the mashed potatoes mix well and cook for a minute till the potatoes are wholly coated with the masala .Finally add the coriander leaves.
Making the jini dosa
Heat a non stick pan on medium flame.Once hot , wipe it with a wet cloth .
Pour a big ladle of batter and spread it in a circular motion to make a thin dosa.
Now spread butter around the dosa.
Put the potato filling and spread it across the dosa.
Now one by one add 1tbsp of each of the grated veges. Spread it evenly.
Add the grated paneer.
Then add the sauces and spread .
Finally spread the cheese.
Now cut and divide the dosa into 3 strips and roll it in a cylindrical shape.
Now place it vertically on plates .
Garnish with more grated cheese over it and serve it hot with thick coconut chutney.
You can add veges and sauces of your choice.
Potato stuffing can be avoided , directly add the veges.
2 – PLAIN CRISPY DOSA / GHEE ROAST.
Heat tawa drizzle few drops of oil wipe it with a wet cloth
Pour 2 small laddles of batter and spread thinly and evenly.
Drizzle few drops of ghee or oil or brush with butter for more taste.
Cook till the dosa turns golden brown and crispy on medium flame.
Don’t flip or turn the dosa.
Just fold and remove.
3 – PIZZA DOSA – spread dosa batter thinly .lower the flame .spread pizza sauce all over.spread a layer of different toppings like – capsicum + boiled corn + onion + tomato finely chopped [ you can saute these veges first if u want ]Finally spread a layer of grated cheese generously .Cover and cook till cheese melts .**Remember the flame has to be low else the dosa will burn .

Heat tava drizzle few drops of oil wipe it with a wet cloth.
Pour 2 small laddles of batter and spread thinly and evenly.
Drizzle few drops of ghee or oil or brush with butter for more taste.
When half cooked place a ladle of masala in the center .
Once it turns golden brown and crispy ,fold the dosa and remove it .
5 – UTTAPAM
[ for uttappam use idli batter directly no need of adding water, it has to be of medium consistency]
Spoon 1 ½ ladle batter in the center of the pan and spread it evenly.
It has to be thick.
Drizzle oil or ghee or butter.
Flip the dosa and cook on the other side.
6 – FOR ONION UTTAPA – add finely chopped onions.
You can give a variation by adding veges of your choice.
Non vegetarions can add chicken tikka piece or egg.
You don’t have to mix the onion ,veges or egg to the batter you have to sprinkle it on the first side of dosa.
7 – MYSORE MASALA DOSA – Mysore masala dosa
Spread the batter thinly like that of masala dosa sprinkle little oil or ghee.
Spread garlic chilli chutney then place in a ladle of potato masala,cook till crispy.
Instead of garlic chutney you can also sprinkle molga podi.

9 – SWEET COCONUT DOSA
pour and spread the dosa batter ,sprinkle freshly grated coconut + sugar /grated jaggery .drizzle ghee .flip and cook on both the sides .dont burn it . [ batter should not be sour ]

how to make topi dosaNOTE
- If the batter gets watery add rawa.
- Keep a separate pan for dosa,don’t use it for any other purpose like making chapatti or frying anything.
- Use idli batter by adding little water to it.
- Never scrub a dosa pan hardly,just clean it using a sponge.
- Ghee adds extra flavor to the dosa.
- Each time you make dosa first sprinkle little oil then wipe it with wet cloth [very imp tip] and then pour the batter and the pan has to be hot.
