HOW TO MAKE KERALA Puttu
PUTTU RECIPE / STEAMED RICE CAKE RECIPE
Puttu is basically a steamed rice flour and coconut log.
Puttu is a breakfast dish eaten in the South Indian states of Kerala, Tamil Nadu and parts of Karnataka, as well as Sri Lanka. Puttu means “portioned” in Malayalam. It is made of steamed cylinders of ground rice layered with coconut shavings, sometimes with a sweet or savory filling on the inside. Puttu is served hot with sweet side dishes such as palm sugar or banana, or with curries such as dal, chickpea, mutton, fish or chicken. In Bhatkal, puttu is served with side dishes such as ghee and sugar or Paya.
Puttu is a popular breakfast in Kerala, served either with Kadala Curry or just some sugar and bananas. Usually it is made with rice flour mixed with coconut , but instead of rice flour we can use other millets flour also like ragi / jowar / bajra / wheat /red rice etc

INGREDIENTS
- Puttu rice flour or any puttu flour [ready made or home made] – 2 cup
- Ghee – 2 tsp
- Salt as per taste
- Water – 3/4 to 1 cup
- Freshly grated coconut
- Puttu maker or idli steamer.
PREPARATION
Take 2 cup of flour in a big plate.
Add ghee + salt and mix the flour.
Sprinkle water little by little over the flour and mix thoroughly with your finger.
You don’t have to knead the flour like a dough so be careful,you have to just mix.
The flour should be moist and of bread crumbs consistency
There should be no lumps.
Keep it aside for 10 mins.
For soft puttu blend the ready flour mixture for few seconds on pulse. [ important tip – do try ]
HOW TO CHECK THE CONSISTENCY –
1 – Take a handful of wet flour in your fist and try to hold it till it gets the shape as seen in the pic.
2 – Again when you press it ,it should crumble as shown in the pic.
HOW TO FILL THE FLOUR IN THE PUTTU MAKER [THE CYLINDRICAL VESSEL ON TOP OF THE POT- kutty].
Put the disc with holes inside the cylindrical vessel, it should fit in well at the bottom of this vessel.
First layer 2 tbsp of grated coconut then add 6 tbsp of the flour mixture.
Again add the grated coconut and then the flour mixture.
Repeat this process till the kutty is full.
You don’t have to press the layers, the layer has to be loose.
End it with the layer of coconut .
HOW TO STEAM THE PUTTU IN THE PUTTU KUTTY
Take 3-4 cup of water in the puttu pot and keep it on high flame .
When the water starts boiling keep the flame on medium.
Place the puttu kutty on the pot and cover it with the lid.
After 5 minutes u will see steam coming out from the holes of the lid,lower the flame to low and steam for more 3-4 mins
U have to steam for 8-10 minutes.[5mins on medium and 3-4 min on low]
When you get a nice aroma , off the flame and remove the kutty.
Keep the kutty aside for 2-3 mins.
Open the lid and gently push it with a wooden ladle.
METHOD FOR MAKING WITHOUT THE PUTTU MAKER IN A IDLI STEAMER.
Layer the idli mould first with coconut then flour and again the final layer with coconut.Steam it for 6- 10 mins.
- Tamilians serve it with cooked and tempered whole green moong dal .
- Keralites serve it with kadala curry [brown kabuli chana gravy] or egg curry

In my house we serve it with banana and sugar for breakfast.
HOW TO MAKE PUTTU FLOUR AT HOME –
Soak raw rice for 2-3 hrs , wash and drain it completely,
Put it to dry under fan or a cool place [not sun]on a bedsheet ,till it dries for 25- 30 minutes [it should be slightly wet]
Blend it in a mixer to a not very fine powder [in betwwen coarse and fine consistency]
Fry the flour in a thick kadai for 4-5 on medium flame by constantly stirring it ,till it is moisture free or slips down the ladle.
Cool the flour ,its ready to use it.
COLOURFUL PUTTU MADE BY USHA – palak juice /turmeric water /beetroot juice /carrot juice .
NOTES
- If you are making for the first time then buy readymade puttu flour from south indian stores
- For soft puttu blend the ready flour mixture for few seconds on pulse.
- You get ready made puttu flour in SouthIndian stores or try online .i have used readymade one.
- While layering you have to start with coconut and end with coconut.
- You can also make of different flour.
