MISHRI KI ROTI (MAIDA COOKIES)

Mishri ki Roti is a simple Rajasthani sugar cookie made with few ingredients . The sweet flavour and crunchy texture that just melts in your mouth .
Mishri roti is traditionally made in a pan/tava, but you can also bake them in a oven.
INGREDIENTS [ 10 – 12 cookies depending on the size ]
- 1 cup all purpose flour /maida
- 3/4 cup fine sugar powder
- 3/4 cup ghee
- ½ tsp cardamom powder
- Few saffron strands , soaked in 1 tsp warm milk
- 1 tbsp Finely chopped dryfruits like almonds or pista
METHOD
In a mixing bowl, mix together the flour + cardamom + sugar.
Gradually add in the ghee and mix it in.
Make a soft pliable dough .
Place the dough onto a plate and flatten it using the bottom of a bowl or tap with hands until it is about 1/2 inch thick.
Cut the dough into any shapes using a cookie cutter .
Carefully pick each cookies with a dosa spatula , slide the cookies onto a nonstick pan/tava OR baking tray .
Garnish with the saffron milk .
Press few finely chopped or sliced dry fruits .
Cook them uncovered on a low flame until the bottoms are light golden brown. Keep moving the pan to shake the cookies for even cooking . It takes around 4 to 5 mins only .
VARIATION – bake them in a preheated oven at 160°C for 10-12 minutes till they are golden brown from bottom.
Once they’re fully cooked , allow them to cool for 10 minutes in the same or tray .
It becomes crisp on cooling .
MISHRI ROTI are ready to serve .
These will stay good for a month in an airtight container in the pantry.
NOTE – You can add 1 tbsp oif crushed mishri /sugar candy .
