CREAMY MIXED VEG WHITE GRAVY

INGREDIENTS

  • Onion chopped – 2 medium
  • Cashew nut – 12
  • Water – 1 cup
  •  Oil – 2 tsp
  • Oil + butter/ghee  – 1 tbsp
  • Ginger garlic paste – 2 tsp
  • Boiled onion and cashew paste
  • Fresh cream –  ¼  cup
  • Sugar – 1 tsp
  • Coriander powder – 3 tsp
  • Chaat masala – ½ tsp
  • Green chilli – 3 or 4
  • Salt to taste
  • Fresh curd –  ½ cup [ not sour ]
  • Garam masala – ¾   tsp OR kitchen king masala – 1 tsp
  • Kasuri methi –  2 tsp
  • Mixed veg -2 cup [ beans/ green peas /cauliflower / carrot / potato /sweet corn ]
  • Capsicum diced – 1

PREPARATION

Take onions, cashew nuts and 2 cups water, boil for 10 mins OR pressure cook upto 1 whistle

Take boiled onion and cashew in a mixie jar and blend .

Now add all the other ingredients one by one . [except oil and butter ]

Add 1/2 cup warm water   and grind into fine paste .

Boil the veges for 12 to 15 mins till they are soft but in shape – don’t over cook .

METHOD

Heat 2 tsp oil in a pan.

Add the capsicum cubes and stir fry for a min , remove and keep aside .

Add the cooked veges , stir fry for 1 min. remove and keep aside .

Add 1 tbsp butter/ghee + oil .

Once hot , add freshly prepared cashew and onion paste.

Stir and cook for 3 to 4 mins on medium flame till raw smell leaves.

Once it starts boiling . lower the flame and add the cooked veges.

Mix well.

Simmer on low flame for a min and off the flame.
