Hummus
HUMMUS
Hummus, also spelled houmous, is a Middle Eastern dip, spread, or savory dish made from cooked, mashed chickpeas blended with tahini, lemon juice, and garlic. The standard garnish in the Middle East includes olive oil, a few whole chickpeas, parsley, and paprika.
Hummus is a rich, creamy paste that’s full of umami flavor. Garlicky, tangy and savory, hummus has a smooth texture that pairs easily with crispy pita and fresh veggies.
Hummus is a truly nutritious snack that is good to include in your daily diet in moderation and when combined with a diverse range of food. Hummus can be a part of the daily diet if consumed in moderation, and the rest of the diet contains a diverse range of foods.
INGREDIENTS
- Chickpeas / white Kabuli chana boiled – 1 cup
- White sesame / til – 2 tbsp [ use the hulled ones ]
- Garlic – 2
- Olive oil – 3 or 4 tbsp [ be generous]
- Lemon juice – of 1 lemon
- Salt as per taste
- ice cubes – 5 to 6 ot use 1 or 2 tbsp chilled water
WHAT ARE HULLED SESAME SEEDS –
Hulled sesame seeds are those kinds of sesame seeds from which the outer covering or hulls have been removed during the manufacturing process.
PREPARATION –
- Wash and soak the chickpeas overnight. Pressure cook it till soft and not mushy. Peel the outer covering .
- Roast the sesame on low flame for few minutes. [colour should not change ]
METHOD [ note – instead of using mixie , use a food processor for good results ]
First grind the sesame into fine pwdr in a mixer .
Add to it the chick peas + garlic + chilli pwdr + olive oil + lemon juice + salt into a fine paste .
Add ice cubes and grind again into smooth creamy texture .
Remove in a serving bowl.
Drizzle more olive oil + sprinkle little chilli powder .
You can serve with pita bread , salty biscuits, veges , as a spread on chapatti or bread , toasted garlic bread , chips , crackers , nachos , shawarma wraps , falafel etc etc .

NOTES
- Roasted til grinded with olive oil is called tahini paste .
- I did not add water ,if you want sprinkle few drops while grinding or add a ice cube while grinding , it gives a fluffy texture .
- Removing the outer skin of the chick peas gives a smooth texture to the paste. It is ok if you don’t peel.
- It was tasty and tasted like our Indian dal chutney.
- I also added a pinch of red chilli pwdr while grinding but it is optional.
- For variation you can add mixed herbs or chilli flakes or pepper pwdr or roasted bell pepper or olives .
- For Indian touch you can sprinkle roasted jeera pwdr or you can grind coriander /mint leaves together.
