                ALOO BHINDI KI SABJI / LADIESFINGER WITH POTATO

INGREDIENTS

  • Tender ladies finger – ¼ kg
  • Potato – 1 large
  • Onion – 1 large
  • Tomato – 1 medium
  • Oil – 1 tbsp
  • Cumin seeds – ½ tsp
  • Red chilli pwdr – 1 tsp or as per taste
  • Coriander pwdr – 2 tsp
  • Turmeric pwdr – ¼ tsp
  • Sugar – 1/2 tsp optional
  • Salt as per taste
  • Chaat masala – ¼ tsp
  • Finely chopped coriander leaves for garnishing.
  • 1 tbsp oil to fry the ladies finger and potatoes.

PREPARATION

  1. Wash, pat dry the ladies finger ,cut both the ends and chop it as per the size you want.**** TIP – after chopping spread it on a plate ,and keep it open under fan or sunlight for min 30 mins or more – helps in avoiding stickiness while cooking .
  2. Peel , wash and dice the potato into small pieces to reduce the cooking time.
  3. Fry the ladies finger and the potato separately till it is cooked.

METHOD

Heat oil in a pan.

Add the cumin seeds let it splutter.

Add the onions and fry till light brown in colour.

Add the tomatoes and cook till they become soft and pulpy.

Add chilli pwdr  + coriander + turmeric + sugar + salt and saute  till the oil separates from the mixture.

Add the potato and ladies finger and stir gently till it gets completely coated with the masala.

Add the chat masala and stir.

Cover and cook for a minute.

Off the flame.

Garnish with coriander leaves.

VARIATION – instead of frying the potato ,u can add it after adding tomatoes and cook it as shown in the video.

NOTES

  1. We can also use garam masala or amchur pwdr.
  2. Instead of coriander leaves we can use kasoori methi leaves.
  3. You can also use boiled potatoes.
  4. Adjust masalas as per your taste.
  5. You can also deep fry the potato and okra .
  6. Chaat masala gives a chatpatta taste and amchur give a tanginess.
