CHAPATI UPMA / KUSKARA / PHODNICHI POLI /ROTI UPMA

INGREDIENTS

  • 4 leftover or fresh  chapathi
  • 1 tbsp – Oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dal
  • 2 tbsp groundnut
  • few curry leaves
  • 1 or 2 green chilli
  • 1 cup veges [ carrot / peas / beetroot etc ]
  • 1 onion finely chopped
  • Few curry leaves
  •  Lemon juice as needed while serving
  • Finely chopped coriander leaves for garnish

METHOD

Take leftover chapathis, tear them roughly with hands.

Transfer to mixer jar and pulse it few times until you get a mixture like flakes.

Transfer to a bowl and keep aside.

Heat oil in a pan

Add mustard seeds + urad dal and let it splutter .

Add groundnut and fry till golden .

Add chopped onion and stir fry till translucent .

Add veges + salt  and stir fry for 2 to 3 mins .

Adjust  salt.

Add chapathi flakes, toss it well.

Sprinkle 1 tbsp water all over and mix . [ for moisture , else it will be very dry ]

Stir and cook for a min .

Finally add the coriander leaves and give a nice mix.

Off the flame.

While serving sprinkle some finely chopped raw onion + roasted jeera powder  + lemon juice and serve

Serve for breakfast or dinner. Serve hot with tea or your favorite drink.
