CHICKEN TIKKA ROULADE / CHICKEN TANDOORI ROULADE

A chicken roulade is a dish where you take a chicken breast, pound it flat, and stuff it with vegetables, cheese, and even other meats by rolling it tightly into a cylinder with the stuffing inside. You then top the roulades with cheese or other sauces.

These roulades are mostly chicken breasts that have been pounded very thin, and then rolled up with strips of cooked bacon, sautéed shallots, and grated Parmesan, then browned and baked. They are served sliced over a creamy white sauce made from the bacon and chicken drippings.

Here I have given a variation by marinating the flattened chicken with tikka masala ,stuffed it with cheese and then fried it .

INGREDIENTS

  • ½ kg boneless chicken breast
  • 1 tbsp ginger-garlic paste
  • 2 tbsp thick or hung curd
  • 1 or 1 1/2 tsp chilli pwdr [as per taste]
  • ¼ tsp turmeric pwdr
  • 1/2 tsp garam masala pwdr
  • 1/2 tsp jeera pwdr
  • 1/2 tsp coriander pwdr
  • 1/2 tsp chaat masala
  • 1 tsp kasoori methi
  • Pinch of tandoori colour [optional]
  • 1  tbsp oil
  • 1 tsp lemon juice
  • Salt as per taste

METHOD

Place the chicken breast in a Ziploc pouch .

Beat the chicken with a meat mallet . Don’t pound the breasts too hard. It could tear apart the breast.

Beat well till it flattens into a ¼ thick inch thin sheet without tearing .

Remove it carefully.

Make a marinade of  curd, ginger-garlic paste, chilli, turmeric ,chaat masala , garam masala pwdr, lemon juice , food colour, kasoori methi pwdr and salt .

Apply the marinade all over the chicken .

Spread a layer of cheese mixture. [ don’t over fill , else it will ooze out while frying ]

Roll it tightly and pin it up using thread or tooth pick .Refrigerate for minimum 1 hr or more . More the marination better the taste and texture.

Heat 2 or 3 tbsp oil in  a pan.

Once the oil is hot , place the marinated chicken roll.

 Fry it on medium flame till it is evenly cooked from all sides .

Keep turning while frying .

Frying time depends on the thickness of the chicken .It takes roughly 15 to 18 mins .

Once done remove and serve hot with any side accompaniments .

FOR VARIATION you can roll the marinated chicken in cling film , poach it for 10 mins and then fry as shown in the video here .

NOTES

Instead of cheese you can use any other stuffing like sauteed spinach ,paneer etc
