Eggless SPONGY sooji RAVA cake
EGGLESS SOOJI CAKE
INGREDIENTS [ 240 ml ]
- Fine sooji /rava – 3/4 cup [zero number sooji ]
- maida – 2 tbsp
- Sugar pwdr – 1/2 cup
- oil – ¼ cup
- Curd – 1/4 cup at room temperature
- milk – 6 to 7 tbsp
- Vanilla essence – 1/4 tsp fruit essence [ even other essence will do ]
- Baking pwdr – 1/4 tsp
- Baking soda – 1/4 tsp
- Tuitti fruiti – 2 or 3 tbsp
PREPARATION
- Sprinkle some maida over the tutti frutti mix well till it is coated.
- Grease the baking tin .
- Preheat the oven at 180* C
METHOD
In a mixing bowl take the ghee + sugar and start beating till fluffy.
Add yogurt / curd + milk + essence and whisk well .
Slowly add the sooji + maida and mix well .
The batter will be watery ,the sooji will absorb it.
Cover and keep aside for 30 minutes .
After 30 minutes preheat the oven .
Add baking pwdr + baking soda and mix well.
Spread the flour coated tutti frutti all over and mix .
Pour it in the greased tin and tap it to remove air bubbles .
Bake it for 30 – 40 minutes on 180*C
Do the toothpick test in the centre of the cake after 30 minutes.
Bake till the toothpick comes out clean ,sides get brown and cake leaves the edges of the tin.
Allow the cake to cool for 10 minutes.
Run a knife around the edges of the tin to loosen the cake.
Remove on a plate.
Cut it into slices once it is cooled properly .
Eggless sooji /rava cake is ready to serve .
NOTES
- Instead of oil we can use ghee or soft butter.
- No need to roast the rava.
- Curd should be at room temperature.[not cold]
- Instead of vanilla essence ,you can use pineapple, butter scotch ,cardamom pwdr ,nutmeg pwdr etc .
- I have added few drops of yellow food colour.- optional
- See that you don’t add the tutti frutti in one place,spread it evenly.in the batter
- Instead of tutti frutti ,u can add add dry fruits .
- I liked the texture of the cake.
