Garlic shallots chutney /Garlic onion chutney
GARLIC ONION / SHALLOTS CHUTNEY
INGREDIENTS [ IF YOU DONT HAVE SHALLOTS USE 1 BIG ONION ]
INGREDIENTS
- Peeled garlic – 20
- Peeled shallots – 20
- Red chilli – 3 or 4 or as per taste
- Oil – 1 ½ tsp
- Urad dal – 1 tsp
- Tamarind – a tiny piece
- Jaggery – a tiny piece
- Asafoetida – a generous pinch
- Curry leaves – 1 or 2 sprig
- Salt to taste
- Water to grind
METHOD [ don’t burn any ingredients while frying ]
Heat oil in a pan ,add red chilli and fry on low flame .
Add urad dal and fry till golden .
Add garlic + shallots and fry till colour changes .
Add curry leaves and fry .
Add tamarind + asafoetida , give a mix and off the flame .
Allow the mixture to cool .
Transfer in a mixie jar ,add salt + jaggery .
Grind it to a paste .
Add 3 or 3 tbsp water ,while grinding . [ add water as per the consistency you want ]
Remove in a serving bowl and serve with idlis and dosas .
Temper it with oil + mustard seeds + curry leaves .
NOTES
- In this recipe ,we don’t get the smell of the garlic .
- Don’t burn any ingredients while roasting .
- If u want u can fry one ingredient at a time and remove.
