MADURAI FAMOUS JIGARTHANDA DRINK RECIPE

Jigarthanda is a cold beverage, that is famous in the South Indian city of Madurai in Tamil Nadu . It is generally prepared and served at roadside stalls as a refreshment during the Indian summer. The basic ingredients include milk, almond gum, sarsaparilla root syrup [ nanhari ], sugar and ice-cream.
The name of the drink literally translates to ‘heart cooler’ (‘jigar’ means ‘Heart’ in Hindi, while ‘thanda’ means ‘Cool’). The drink is actually supposed to possess great health benefits, is believed to help cool down body heat and aid in the healing of several ailments .
JIGARTHANDA / FALOODA – These two drinks are quite similar but completely different in taste. While falooda has noodles in it, jigarthanda has badam gum/ pisin instead. Both have flavoured milk and served with icecream on top.
WHAT IS BADAM PISNI – Easily available online
Almond gum or badam pisin is the natural gum obtained from the sweet almond tree. Is is a natural coolant and has jelly like properties that gives good texture and taste to your drink.
Badam pisin – badam pisin is also known as katira gond in hindi. In english its known as tragacanth. Its also known as almond gum. In ayurvedic shops you can easily get katira gond. I bought them online from amazon.in.
Badam Pisin | Badam Gum | Almond Gum is a natural gum that has amazing health benefits from aiding weight loss to reducing body heat. It turns into a jelly when soaked in water and is used in the famous Jigarthanda drink. Usually badam pisin is had during summers in Tamil Nadu.
Don’t confuse yourself with ‘Gond’ used in ‘Gond laddoo’s. They are not the same, Badam Pisin/Gondh is popular in Tamilnadu and especially in Madurai.
WHICH ICE CREAM IS USED – a special ice cream made with reduced milk called Bhai Ice Cream [ Madurai Special Bhai Ice Cream ] Bhai Ice Cream is Madurai special ice cream prepared with milk, sweetened khoya [ mava ] and caramel. This ice cream is used in Jigarthanda as topping. It can also be called as khoya or caramel Ice Cream. We can try kesar kulfi .Even raj bhog ice cream will go well .
Actually making authentic jigarthanda is an big process .Here I am sharing an easy recipe and instant recipe . This is not an authentic method.
INGREDIENTS [ 2 or 3 serving ]
- Soaked badam pisni – 10 tbsp or as per need
- Condensed milk – 3 tbsp as per the taste you want
- Nanahri syrup – 2 or 3 tbsp
- Chilled milk – 500 ml
- Butter scotch ice cream / kulfi
PREPARATION
Take a small piece [ marble size ] of badam pisin in a bowl . Wash it then add 1 1/2 cup water and keep covered undisturbed overnight. It will increase in volume, if you see any brown spots then remove it carefully and use the rest. *You need to add more water as it grows in volume. It blooms and become jelly like. Strain the extra water from the soaked badam pisin and keep aside. You can also refrigerate the soaked badam pisin and use when ever required .
Strain the badam pisin well before using .There should be no water content .
METHOD
Take a mixing bowl add condensed milk + syrup + chilled milk and mix well .
Take 1 serving glass [ 250 mil glass ] and add 4 to 5 tbsp of badam pisni .
Pour chilled milk mixture .
Give a stir so that all blend well.
Top it with 1 or 2 scoop of ice cream .
Drizzle some nannari syup from the top.
You can also add some dry fruits or tutti frutti. [ optional ]
Serve immediately

NOTES
- You can collect the malai that forms while thickening milk and use it for garnishing while serving jigarthanda, thats how they serve in madurai shops.
- Nannari syrup and badam pisin are the main star ingredients in jigarthanda . No replacements for it.If you want to feel and taste madurai jigarthanda then you should use those ingredients.
- In some shops they even use basil seeds but guess its not the authentic version of madurai jigarthanda.
- You can add less or more of the ingredients as per your choice.
- Instead of nannari syrup, you can use rose syrup or rooh afza.
- Instead of condensed milk, you can use basundi or rabri.
