RIDGE GOURD PEEL THECHA | BEST OUT OF WASTE RECIPE | TURAI KE CHILKE KI CHUTNEY | SHIRALYACHYA SAALACHI CHUTNEY

The nutritive peels of the humble Ridge gourd or soft gourd can be used to make a quick, lip smacking spicy chutney

Thecha or kharda is an authentic maharashtrian recipe of dry green chilly or red chilly garlic chutney .it is served with jawari (sorghum)or bajra bhakri (roti). Thecha is a pounded chutney, it is pounded in iron or wooden mortar and pestle (khal batta or budgy in marathi ) 

INGREDIENTS

  • Turai / tori skin –  2 cup
  • Green chilli – 8 to 10  less spicy or as per taste
  • Garlic – 10
  • Peanut pwdr – ¼ cup
  • Coriander leaves chopped – 2 or 3 tbsp
  • Oil – 2 tbsp
  • Salt to taste

METHOD

Heat a griddle / tava , add the turai skin + little salt . Roast till it softens a bit . Remove and keep aside .
Dry roast green chillies on a griddle OR direct flame.
Roast from all the sides till slight burn marks are there.
In a mortar or mixie jar , take the roasted turai skin + garlic + chilli  , smash/pound / grind to a coarse mixture .
Mix everything nicely with spoon.
Heat oil in a pan, add ready  mixture +  groundnuts powder + salt + coriander leaves .
Stir fry for 2 – 3 mins on medium flame.
Thesa is ready to serve.
This Maharashtrian versatile thesa is very good combo for Roti / bhakri / bread /chapati or any snacks.
