SINDHI SEYAL ANDA / VEGETABLE EGG CAKE RECIPE

INGREDIENTS

  • Egg – 5
  • Oil – 2 or 3 tbsp
  • Onion chopped – 2 big
  • Tomato finely chopped – 2 big  
  • Garlic chopped – 1 tbsp or green garlic chopped – 4 tbsp
  • Green chilli chopped – 2
  • Potato thin roundels – 1 big [ 1/4 inch thickness ]
  • Red chilli pwdr – 1 tsp + ½
  • Turmeric –  ½  tsp
  • Garam masala – ½
  • Coriander pwdr – 2 tsp
  • Kasoori methi pwdr – 1 tsp
  • Salt to taste

NOTE – I have add green garlic .If you don’t have add regular garlic chopped .

METHOD

Heat oil in  a non stick small wide pan .

Add onion and stir fry till light brown .

Add potato and mix well.

Add turmeric + salt  and stir fry for a min .

Cover and cook on medium to low flame till the potatoes are half done . Stir in between .

Add tomatoes + green chilli  + 1 tsp red chilli pwdr + coriander pwdr + garlic  and mix well.

Stir fry for a min .

Cover and cook till the tomatoes soften .

Open the lid and sprinkle 2 tbsp of water and mix well.

Spread and level the masalas as shown in video .

Lower the flame and place each broken egg around the edges..

Sprinkle red chilli +  salt + garam masala pwdr  + kasoori methi all over .

Cover and cook till the eggs are cooked . [ 5 – 7 mins ]

Off the flame and garnish with coriander leaves .

Take a knife and slice it like pizza.

With a help of a spatula , pick the sliced portion and serve with roti/phulkas/chapati/bread/pav etc.

VARIATION – You can add 1 egg in the tomato masala and scramble it , so the masalas get a body .
