JACKFRUIT APPE /JACKFRUIT APPAM / JACKFRUIT NEI APPAM /JACKFRUIT FRITTERS / HALASINA HANNU MULKA
Jackfruit appam or Jackfruit sweet paniyaram is called Gaarige in Tulu . One of the traditional Mangalorean dishes during the monsoon season. Delicious sweet idlis made from ripe jackfruits .
Jackfruit appes tastes heaven when had fried in ghee. They taste the best after a few hours of making. They are either served for breakfast or as a tea time snack.
Jackfruit is quite healthy. It provides a moderate amount of calories in addition to lots of fiber, vitamins, minerals and antioxidants.
Jackfruit also contains folate, niacin , riboflavin , potassium, and magnesium.
Jackfruit’s content of immune-boosting vitamins A and C may help prevent illnesses
Being high in fibre, it aids in digestion. Its mucilagenous pulp has been found to be useful in boosting the immune system.
INGREDIENTS
- 2 OR 2 ½ cup ripe jackfruit pieces
- 1 cup raw rice
- 6 or 8 tbsp jaggery powder
- 1/2 cup grated coconut
- Pinch of baking soda
METHOD
Soak rice for 2 hrs .
Deseed the ripe jackfruits, finely chop them and keep them aside.
Wash the rice grains well after soaking and drain out all the water completely.
Grind the rice grains into a coarse powder without using any water.
Now add chopped jackfruit + grated coconut + salt + powdered jaggery into a smooth coarse paste, without using any water.
We need a thick batter. The batter will be thick dropping consistency.
Beat the batter well for 1 min and let it rest of 20 mins .
[don’t rest the batter for more time , as we are using fresh fruit pulp ]
Heat paniyaram pan (Appe pan) and add few drops of ghee and pour the batter.
Cook covered on medium .
After 2 mins, flip and cook .
Drizzle few more drops of ghee all over .
When both sides are golden and cooked from inside, transfer to serving bowl.
Serve for breakfast or as a tea time snack.
They taste yum after few hours of making.
METHOD 2 Using idli rava [ rice rava ]
Here we use 1 cup idli rava .
Just grind jackfruit, jaggery and coconut .
Mix in the idli rava .{ adjust water as needed – not much ]
Keep the batter aside for 30 mins
The batter is ready .
NOTE –
- First grind rice and then grind it with ripe jackfruit Or else the rice grains may not breakdown as easily as the jackfruit does.
- The more jackfruit you add to the batter, the better your idlis will taste in the end.
- Adjust the amount of jaggery you add according to your taste, depending on how sweet the jackfruits are
- The more jaggery you use, the more watery your batter gets. So be careful.
- If your batter gets runny, then add semolina , not chiroti rava to get the desired thick consistency and let the batter sit for few mins .
- You can add fried cashew pieces or fried coconut bits to the batter for some crunch, with every bite .
