Cluster beans stir fry
CLUSTER BEANS / GAVAR STIR FRY / GUAR BEANS/ SEENI AVARAKKAI PORIYAL/ KOTHAVARANGAI PORIYAL.
INGREDIENTS
- Tender cluster beans chopped – 200 gms
- Oil – 1/2 tbsp or 1 tbsp
- Mustard seeds + urad dal – 1 ½ tsp
- Onion finely chopped – 1
- Curry leaves – few
- Green chilli chopped – 3 or as per taste
- Turmeric pwdr – ¼ tsp
- Asafoetida – a pinch
- Freshly grated coconut – 3 tbsp
- Salt to taste
PREPARATION
Clean and wash the beans .Trim the head and tail.Remove the string .
Chop it as per the size you want, I have chopped it finely.
METHOD – 1
Heat oil in a pan.
Add mustard + urad dal and let it splutter.
Add onion + green chilli + asafoetida and fry till onions turn translucent.
Add chopped beans + turmeric pwdr + salt and mix well.
Add few tbsp of water , mix well and cover it.
Cook on low flame till the beans become soft .
Give a stir , drizzle little water if required and cook till it is done.[ when oil separates a bit]
Add grated coconut , mix well and off the flame.
Serve as side dish for chapatti and rice .
METHOD – 2 [ to remove bitterness ]
Cook the beans in water [as required ] + turmeric + salt till soft .[ don’t overcook ,discard the excess water ]
Heat oil in a pan , add mustard seeds + urad dal and let it crackle.
Add onion + curry leaves + chilli + asafoetida and fry till translucent.
Add the cooked beans and stir fry till water evaporates and the beans looks little oily.
Adjust salt.
Finally add the grated coconut and give a stir .
Off the flame and transfer into a serving bowl .
Serve as side dish for chapatti or rice.
NOTES
- Together with the onion you can also add cooked moong dal or cooked chana dal [not mushy]
- Keep stirring in between and add water if required.
- You can also add ½ tsp of coriander pwdr in the end.
- You can make a combination with beans + potato or beans + finely chopped
- You can also add little sambar pwdr.
- Instead of boiling , you can steam the beans first and then temper it.
- You can also cook in the cooker upto 2 whistles.
- My mom used to discard the water in which she cooked the beans ,as cluster beans sometimes have a bitter taste.
- Also while cooking some recipes of cluster beans we add tomatoes to reduce the bitterness.
- Cluster beans is prepared in most of the auspicious occasion of Maharashtrian.

2. It also contains Vitamin C that makes bones and teeth stronger.
3. The amount of folic acid content is essential for pregnant women.
