Diwani palak paneer

DIWANI PALAK PANEER

here i have used curd , which gives a bright colour , also i have add fried mushrooms and boiled corn.

INGREDIENTS

  • Spinach /palak – 1 bunch
  • Paneer cubes – 250 or 300 gms
  • Coriander leaves – ½ cup
  • Butter + oil  – 1 tbsp
  • Onion roughly chopped – 1
  • Tomato roughly chopped – 1 OR curd – 1/4 CUP
  • Ginger garlic paste – 2 tsp
  • Green chilli – 5 or 6 or as per taste
  • Cashew – 6 or 7
  • Kasoori methi pwdr – 1 tsp
  • Coriander pwdr – 1 tsp
  • Garam masala pwdr – ½ tsp OR kitchen king masala – 1 tsp
  • Turmeric pwdr – a generous pinch
  • Sugar – 1 tsp
  • Salt to taste
  • Butter – 2 tbsp
  • Fresh cream – 2 tbsp

PREPARATION

Clean ,wash and rinse and soak the palak leaves for sometimes . Again rinse and drain the excess water .Transfer it to a colander for excess water to drain off .Chop it roughly .

Heat 1 tbsp oil +  butter , add onion and fry till transparent .

Add ginger garlic paste + green chilli and fry till raw smell leaves .

Add the chopped tomato + cashew + salt and fry till it softens.

Add coriander pwdr + garam masala pwdr + sugar + kasoori methi pwdr + turmeric and fry for few seconds .

Add coriander and mix well .

Add palak and fry till it reduces completely .Dont over cook the palak .

Allow the mixture to cool.

Transfer this mixture to a mixie jar and blend it into a smooth mixture .Keep aside . Add 1/2 or 3/4 cup water or as needed while grinding .

METHOD

Heat 2 tbsp butter in a pan .

Add the palak puree and mix well.

Add kasoori methi pwdr .

Adjust water if required.[ the gravy has to be thick ]

Mix in the fresh cream .

Add the paneer cubes and mix

Simmer on low flame for a minute and off the flame .

Serve hot as side dish for rice or any Indian breads.

NOTES

  1. Instead of paneer cubes ,u can add fired mixed veges .
  2. It is a must try gravy .
  3. Even non vegetarians can try this gravy by adding small pieces of  fried / boiled  chicken or boiled eggs .
