HEALTHY RAGI FLAKES SOUP

Finger millet is a rich source of protein and minerals in comparison to all other cereals and millets. It contains important amino acids. It has the highest amount of calcium (344 mg) and potassium (408 mg). It is beneficial for individuals with low haemoglobin levels as it is a great source of iron. It is also rich in antioxidants, fiber, Vitamin B3, calcium and is gluten-free. Rich in magnesium improves insulin response by lowering insulin resistance and benefits diabetic people. It is good for heart, bones, teeth skin and lowers blood pressure and cholesterol.

INGREDIENTS

  • Ragi flakes – 3/4 OR 1 cup
  • mixed veges finely chopped – 1 cup [ capsicum / carrot / green peas / beans / cauliflower / cabbage / palak etc ]
  • Onion / shallots finely chopped – 2 or 3 tbsp
  • Ginger grated / crushed – 2 Tsp
  • Garlic finely minced – 2 tsp
  • Oil – 1 tsp
  • Jeera – 1/2 tsp [ optional ]
  • Freshly ground black pepper – 1 tsp
  • Turmeric – ¼ tsp
  • Water – 2 cup
  • Lemon juice
  • Finely chopped coriander leaves / spring onion leaves to garnish

METHOD

Heat oil in a pan , add jeera and let it splutter

Add onion + grated ginegr + garlic and stir fry for a min .

Add all the veges and stir fry for 2 mins.

Add turmeric and mix well .

Add 2 cup water + pepper pwdr and give a nice mix .

Bring it to a boil .

Add ragi flakes and mix well.

Cook on low flame for 4 to 5 mins .

Keep stirring in between while cooking .

Off the flame and garnish with coriander leaves .

While serving drizzle some lemon juice.

Serve hot .

RAGI FLAKES –

Ragi millets are parboiled / soaked , rolled and flattened to produce flakes. The Flakes are capable of absorbing a large volume of liquid when used in a different recipe, therefore imbibe flavors well. 

Ragi Flakes also known as Finger Millet Flakes, This healthy Breakfast Cereal made from whole Ragi, agi flakes have a slightly sweet taste.

Finger millet flakes can be cooked in delicious delicacies like porridge, dosa, upma, pancakes, and laddoo.
