SAMA WAFFLE RECIPE FOR FASTING  / MILLETS WAFFLE RECIPE

Since during fasting we abstain from cereal grains and to make any rice based dishes we use samvat or sama grains instead of rice. These are not a kind of rice variety or even associated with rice. Basically they are from the millet family. The english name for sama ke chawal is barnyard millet.

Sama rice or samak rice, is not rice, but a millet, a gluten-free, fibre-rich, and nutritious seed. It is a tiny, round, cream-coloured grain (sama seeds or samo seeds), smaller than the rice grain.

samak/sama/samvat/samo/bhagar or barnyard millet is a popular ingredient, especially used in dishes made during the religious Hindu fasting days in India.

Samak rice is extremely dense in terms of nutritions. It has an excessively high amount of fibre, protein, and micronutrients like iron and zinc and it has multiple health benefits.

These rice are good for the digestive system, they are easily digestible they also prevent stomach-related issues such as constipation. Samak is gluten-free, high in fibres and protein and low in calories, which means it can help you in weight loss if eaten over a sustained period of time.

INGREDIENTS [ add as per what you eat during fasting ]

  • Sama chawal – ½ cup
  • Cooked mashed potato / sweet potato – 1
  • Green chilli ginger paste – 1 ½  tbsp
  • Crushed peanuts – ¼ cup
  • Grated carrot – ¼ cup
  • Jeera – 1 tsp
  • Sesame seeds – 1 tsp
  • Coriander leaves / curry leaves finely chopped – 2 tbsp [ optional ]
  • Curd – ¼ cup
  • Sabudana powder / arrow root  / rajgira / bagar flour  – ¼ cup
  • Oil to deep fry
  • Salt to taste
  • Waffle maker

METHOD

Wash the sama chawal well .

Pressure cook it with 1 cup water upto 2 whistles .

Once the pressure releases , open and transfer to a plate .

Allow to cool .

Now add all the other ingredients one by one and mix well into a dough.

Plug in the waffle maker and grease it well with oil

Preheat it .

When the plates are very hot , 

Take a portion of the mixture and place it on the hot plate .

Close the lid and let the waffle cook till golden and crisp .

Once the waffle is cooked, remove it from the waffle maker

Cut it in half and serve it along with any Chutney
