SPICY CURD IDLI

Spicy curd idli

HEALTHY DAHI IDLI

NOTE – Use idli made from rice rava for better texture . RECIPE – Idli recipe using idli rava – Mary’s Kitchen (maryzkitchen.com)

INGREDIENTS

  • Idlis as needed , freshly steamed
  • Fresh chilled curd – 1 cup
  • Water – 3 or 4 tbsp
  • Grated coconut – 1 tbsp [ optional ]
  • Finely chopped or crushed  green chilli as per taste
  • Grated ginger – ¼ tsp
  • Salt to taste  
  • Oil – 2 tsp
  •  Mustard seeds – ¼ tsp
  • Urad dal – ¼ tsp
  • Curry leaves few
  • Salty or kara boondi as needed
  • For garnish grated carrot or beetroot / pomegranate /coriander leaves

METHOD

Whisk the curd + water +   ginger + chilli + salt + coconut  well .

Curd should always be thin in consistency and cool. If you add thick Curd, the Idli soaks up the water in the Curd, and Curd flakes form on the surface of the Idly. So dilute it with water.

Add in the idlis and soak for some time till the idli absorbs the curd .

Once done transfer the idlis to a serving plate .

Heat oil in a small pan , crackle mustard seeds + urad dal + curry leaves and pour it over the dahi idlis

Garnish with boondi + grated carrot + coriander leaves and serve immediately .
