Dragon chicken

Dragon Chicken is easy to make and can be cooked in 45 minutes. Dragon Chicken is best to eat as an appetizer..
It is a popular Indo-Chinese chicken recipe. Thin long strips of chicken breast are marinated andthen batter fried. It is then tossed with cashews, veggies and sauces. Serve it as a starter or side dish with fried rice or noodles .
INGREDIENTS
- Boneless chicken strips – 250 gms marinated with little salt + ½ tsp pepper
- All purpose flour/ maida – ¼ cup
- Cornflour – 2 tbsp
- Baking powder – ½ tsp
- Egg – 1
- Water – approximately ¼ cup
- Garlic minced – 2 tbsp
- Dried red chillies – 4
- Onion sliced- 1 small
- Cashew nuts – 20 nos [ split it ]
- Capsicum thinly sliced – 1
- Red Chilli sauce – 2 tbsp
- Soya sauce – 1 tbsp
- Tomato sauce – 3 tbsp
- Sweet chilli sauce – 2 tbsp [ optional ]
- Water – 6 tbsp
- Salt to taste
- Sugar – 1 tsp
- White sesame seeds as needed
- Finely chopped spring onion greens
- Oil- 1 tbsp + oil for deep frying
PREPARATION
- Cut the boneless chicken into 2 inch strips. Add salt + pepper powder and mix well. Set aside for minimum 15 mins or more.
- Make a batter of beaten egg + maida + pepper pwdr + baking pwdr + corn flour + food colour + salt
- Add the marinated chicken into the batter and mix well.
- Heat oil in a deep pan .Add the cashew and fry till golden . remove and keep aside .
- Slide in the chicken strips and fry the chicken in small batches till golden and crisp. Takes roughly around 4-5 mins on medium flame as the chicken is chopped thinly . Drain and keep aside .
- Make a mixture of all the sauces + sugar + 6 tbsp water and keep aside.
METHOD
Heat – 1 tbsp
Add the chopped garlic and stir fry for few seconds , colour should no change.
Add broken dried red chillies and give a stir .
Add the onion and stir fry for a min .
Add he capsicum and stir fry for a min .
Add the sauce mixture + salt as needed and mix well.
When it starts bubbling, lower the flame and add the fried cashews and give a mix .
Add the fried chicken strips and mix well.
Stir and cook for 1 or 2 mins till the sauce is absorbed by the chicken .
Off the flame and garnish with spring onion greens + white sesame seeds.
Serve hot.
Note once , you switch off the flame , you can add little honey for more taste .
