KARNATAKA STYLE PULAV
KARNATAKA STYLE TARKARI PALAV RECIPE
Very tasty, nutritious and filling rice recipe prepared using pressure cooker. Karnataka style pulao is an one pot meal, prepared using regular rice, mixed vegetables and spices . Its called tarkari palav .
In this recipe we will use fresh coconut .Freshly coconut is ground to a smooth paste with whole spices, green chili, mint and coriander. This ground paste is sauteed with the oil and cooked with veggies and rice . This freshly ground masala paste truly elevates the taste of the pulao to the next level.
Veg pulao is a delicious one pot dish made with rice, aromatic spices and vegetables.
INGREDIENTS
- Rice – 1 cup [ basmati or sona masuri ]
- Mixed veges – 2 cup [green peas, cauliflower, carrots, potatoes, beans etc ]
- 2 tablespoon peanuts [ optional ]
- 2 or 3 tbsp oil
- 2 bay leaf
- 2 cardamom
- 2 clove
- 1 inch piece cinnamon
- 1 tsp coriander seeds
- 1 tsp jeera
- 1 tsp fennel seeds
- 1 star anise
- 1 black cardamom
- 1 big onion thinly sliced
- 1 tomato chopped
- Few curry leaves
- ½ cup coriander leaves
- ¼ cup mint leaves
- 1/4 cup fresh shredded coconut
- 6 cloves garlic
- ½ inch piece ginger
- 3 or 4 or as per taste green chillies
METHOD
Clean , wash , rinse and soak the rice in water for 30 minutes.
Grind green chilli + ginger garlic + coriander leaves + mint leaves + fennel seeds + jeera + coriander seeds + cardamom + clove + cinnamon into a fine paste by adding ½ cup water .
Heat oil in a pressure pan .
Add in the bay leaf + black cardamom + star anise and give a stir .
Add in the sliced onion + curry leaves and stir fry till translucent .
Add tomatoes and peanuts. Stir fry till tomatoes soften .
Add in the ground masala and mix well.
Stir fry for few mins till raw smell leaves minutes.
Add in the veggies and mix well .
Stir and cook for 2 mins .
Add 1 ½ cup water + salt and mix well. Bring it to a boil .
Once the water is boiling, add in the soaked rice and give a mix .
Bring to a boil and cover it .
Pressure cook for 2 whistles on medium flame .
Once done off the flame and let it rest for 10 mins 15.
Let the pressure release on own.
Fluff it gently with a fork .
Karnataka style vegetable pulav is ready.
Serve hot any gravy kurma , salad , raita ,papad etc .
NOTE
- Increase or decrease masala as per taste .
- Traditional Karnataka Style Vegetable Pulao recipe is made with sona masoori rice. You can also use Basmati rice.
- I have used fresh green peas here, if you are using dry peas then soak it overnight .
- In the end, you can also add fried bread cubes or panner , which adds a nice taste and texture to the pulao.
- Use any vegetables of your choice .
