Pepper chicken
PEPPER CHICKEN

INGREDIENTS
- Boneless chicken – 250 gms
- Ginger garlic paste – 1 tsp
- Soya sauce – 2 tsp + 1 tsp
- Olive oil – 1 tbsp
- Finely minced garlic – 1 tbsp
- Freshly crushed black pepper – 2 tsp
- Finely chopped spring onion greens for garnish
- Salt to taste
PREPARATION
- Clean ,wash, rinse and pat dry the boneless chicken.
- Chop it into thin strips as shown in picture .[ thickness of ½ cm ]
- Marinate it with 2 tsp soya sauce + ginger garlic paste + salt and keep aside for 30 minutes or more, even overnight will do .Be careful while adding salt as we have added soya sauce]
METHOD – 1
Heat ½ tbsp oil in a pan add the marinated chicken and stir fry on high flame for 1 minute till it sweats. [leaves water ]
Cook on medium flame till the chicken is cooked and all water evaporates.
Push the cooked chicken towards the edge of the pan , clearing the middle space .
Add ½ tbsp oil + minced garlic + crushed pepper and stir fry .
Now mix the chicken also so that it gets coated with the pepper and garlic.
Drizzle 1 tsp of soya sauce all over and mix well.
Adjust salt if needed .
Stir fry for few seconds and off the flame .
Garnish with spring onion greens .
Serve hot as starter .
METHOD – 2 [adding onion and capsicum ]
Heat ½ tbsp oil in a pan add the marinated chicken and stir fry on high flame for 1 minute till it sweats. [leaves water ]
Cook on medium flame till the chicken is cooked and all water evaporates. Keep aside.
Heat oil in another pan ,add minced garlic + crushed pepper .
Add onion cubes and saute till translucent .
Add capsicum cubes and stir fry .[ you can also add baby corn ]
Add 1 tsp soya sauce .
Adjust salt.
Mix in the cooked chicken and stir fry for few seconds.
Garnish with spring onion greens.
NOTES
- The chicken will not take more than 10 minutes to cook as v have chopped it very thinly.
- You can also add minced green chilli with garlic for more spiciness.
- Be careful while adding salt as we have added lot of soya sauce.
- You can use this chicken for making chicken roll or frankies.
